Starting out on a watercolor journaling journey and these are some of my outputs.

Every wash of color is a little surrender. I don’t control where the water goes, only how I respond to it — much like healing itself. Journaling with paint has become my quiet ritual: no pressure to get it “right,” just permission to let the colors bleed, blend, and settle where they need to. Some days it’s soft blues, other days it’s messy and unexpected — but every page is proof I’m still moving forward.

I have original spam leftovers, a small bag of remaining frozen broccoli, few old potatoes, a dozen of newly bought eggs and no idea what to cook for dinner. Sometimes it’s amazing what AI suggest if you give them these ingredients. Today it was Mashed Potato Quiche! 🥔 🧀 🥚 🫑

Microwaved a few potatoes in my trusty potato sack (4-5 mins, tastes baked, zero effort), mashed with butter, salt, and pepper, then pressed that into a pie plate as my “crust” — no pastry needed. Baked it at 200°C for 20 mins to set, then piled on frozen broccoli, cubed leftover spam, grated cheese, and diced red bell pepper. Beat 3 eggs with a splash of cream, salt, and pepper, poured it all over, covered with foil, and baked at 250°C for 25 mins, then uncovered for 5 more to brown the top. Ovens are all different so just watch that the eggs don’t overcook — you want it just set, not dry. Zero waste, gluten free, all comfort.

My soda alternative 🥤

I switched from plain apple cider vinegar to this pomegranate ACV instead. It’s still fermented ACV, but with pomegranate added — so you get antioxidants, polyphenols, and acetic acid in one drink. It has a mildly sweet and tart taste that’s really refreshing. Perfect to pair with light to heavy meals.

Benefits: good for your heart, helps manage weight, supports digestion, and boosts immunity. The acetic acid helps with insulin sensitivity, while the pomegranate fights inflammation.

It’s not 100% sugar-free, but way lower in sugar than regular soda. Just drink it in moderation 🙂
