Ingredients
1 ยฝ cups (190g) all-purpose flour
1 tsp baking soda
ยฝ tsp salt
ยฝ cup (115g) melted butter or vegetable oil
ยพ cup (150g) brown sugar (or white sugar)
2 large eggs
3 medium ripe bananas, mashed (about 1 ยผ cups)
1 tsp vanilla extract
1 tbsp white vinegar (or apple cider vinegar)
2 tbsp milk or water
(Optional: ยฝ cup chopped nuts or chocolate chips)
Instructions
Preheat oven to 175ยฐC (350ยฐF). Grease or line a 9x5-inch loaf pan with parchment paper.
Combine dry ingredients:
In a bowl, whisk together the flour, baking soda, and salt. Set aside.
Mix wet ingredients:
In another large bowl, mix melted butter and sugar.
Add eggs one at a time, whisking until smooth.
Stir in mashed bananas and vanilla extract.
Add vinegar and milk:
Stir in the vinegar and milk (this will lightly bubble โ thatโs normal!).
Combine:
Gently fold in the dry ingredients until just combined.
Donโt overmix โ a few small lumps are okay.
Fold in nuts or chocolate chips if using.
Bake:
Pour the batter into the prepared loaf pan.
Bake for 50โ60 minutes, or until a toothpick inserted in the center comes out clean.
Cool:
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Tips
The vinegar enhances rise and tenderness โ perfect if your bananas are extra dense.
You can use apple cider vinegar for a mild tang.
For extra moistness, add 2 tbsp of yogurt or mashed avocado along with the bananas.
