Chicken Sotanghon Soup

Ingredients:
Chicken breast
Chicken powder
Garlic, onion
Sotanghon noodles
Salt & pepper
Baguio vegetables
Patis
Eggs

Procedure:
Fry shredded chicken with chicken powder until golden
Sauté garlic and onion
Add broth or water → add sotanghon
Season with salt, pepper, and patis
Add vegetables → simmer
Add beaten eggs → serve hot

Sinigang na Pata

Ingredients:
Pata
Onion, tomatoes
Gabi
Sinigang mix
Patis
Siling haba
Kangkong

Procedure:
Sear pata → add water → pressure cook 30 mins
Add onion, tomatoes, gabi → simmer
Add sinigang mix + patis
Add siling haba → mash gabi
Add kangkong → boil → serve

Homemade Yogurt

Ingredients:
1L full cream UHT milk
100g powdered milk
80g condensed milk (optional)
Plain yogurt (with live cultures)

Procedure:
Mix powdered + condensed milk
Add UHT milk → stir
Add yogurt starter → mix
Keep warm (~40°C) for 8 hrs
Refrigerate 12 hrs → serve

Baked Macaroni

Ingredients:
Macaroni
Ground beef
Garlic, onion
Spaghetti sauce
Evaporated milk
All-purpose cream
Butter, flour
Cheese spread
Cheddar cheese, quick melt cheese
Salt, pepper, paprika, cayenne, garlic powder
Sugar

Procedure:
Cook macaroni → set aside
Prepare red sauce (beef + sauce + milk + cheese + seasoning)
Prepare white sauce (butter + flour + milk + cream + cheese)
Combine macaroni with red sauce → transfer to dish
Top with white sauce and cheese → bake at 250°C for 10 minutes

Adobo sa Patis

No exact measurements — adjust according to your taste.

Ingredients:
• Pork belly
• Pure patis (not flavored)
• Spiced vinegar
• Whole garlic cloves
• Whole black pepper
• Ground black pepper
• Laurel leaves
• Brown sugar

Procedure:
1. Boil the pork belly.
2. Add patis and spiced vinegar. Let it boil first before stirring.
3. Add garlic, whole and ground black pepper, laurel leaves, and brown sugar.
4. Simmer on low heat until the pork is tender.
5. Continue cooking until the pork releases its oil and the sauce thickens.

Best served hot with steamed rice.

Pork Steak

Ingredients:
Pork steak
Salt and pepper
Olive oil
Butter
Garlic cloves

Procedure:
Pat the pork dry → season both sides
Heat pan with oil → sear 3 minutes per side
Add butter and garlic → baste and cook 2 minutes per side
Let it rest for 5 minutes → slice and serve

Ingredients:
Kalabasa
Sitaw
Sigarilyas
Garlic, onion, tomatoes
Leftover sisig (or any meat)
Bagoong
Salt

Procedure:
Heat oil → sauté leftover meat
Add garlic, onion, tomatoes → mash slightly
Add kalabasa + water + bagoong → simmer
Add sitaw & sigarilyas
Season with salt → simmer until cooked

Ingredients:
Red bell pepper
Butter
Cream cheese
Mayonnaise
Cheddar cheese
Condensed milk
Powdered milk
Salt & pepper

Procedure:
Roast bell pepper → peel & dice
Mix butter, cream cheese, mayo, cheddar
Add condensed milk, powdered milk, salt & pepper
Add bell pepper → mix → spread on bread

Thicker + Creamy Pork Sinigang

Ingredients:
Pork ribs
Onion
Tomatoes
Patis
Gabi (taro)
Sinigang mix
Banana blossom
Kangkong

Procedure:
Boil pork → add onion, tomatoes, patis → simmer
Add gabi → cook until soft → mash with tomatoes
Add sinigang mix → add banana blossom
Add kangkong → simmer briefly → serve
