/ Soy Sauce Dregs / Savory/ Corresponding organ:kidney
Traditional Chinese Medicine theory, salty taste can soften and disperse lumps, while black food can nourish the kidneys and promote blood circulation.
萬豐醬油 The factory makes this soy sauce processed from the Tainan No. 5 contract-grown organic black beans, whole beans are fermented, no liquid added placed in Ceramic urn, and sun & night aged for over a year.
After the mash is matured, it's simmered slowly and heated to extract the soy sauce. The main by-product of this manufacturing process is soy sauce dregs, which contain various amino acids. Among them, the bitter branched-chain amino acids are key components of chicken essence and are essential amino acids for the human body, contributing to increased endurance and fatigue resistance.
Amber candy made with soy sauce and soy sauce dregs not only has a salty and sweet taste, but also has the aroma of fermentation.
黑色/ 醬油粕/ 鹹味養腎
在中醫藥理的釋義中,鹹味能軟堅散結,黑色食物能補腎活血。
萬豐醬油使用台南5號契作有機黑豆,全粒黑豆發酵、乾式入缸、日曝熟成365日以上,熟成後的醬醪靠火候慢慢調煮加熱萃取出醬油。釀造過程中主要的副產物是醬油粕,醬油粕含有多種胺基酸,其中帶有苦味的支鏈胺基酸是雞精的重要成分,也是人體的必需胺基酸。
以醬油與醬油粕做的琥珀糖,不只鹹甜二味,還吃得到發酵的醬香。

/ Cyclina sinensis / Sweetness / Corresponding organ:spleen
It is hot and humid in Taiwan, so we believe to nourish the spleen and relieving high fever by food with luscious and umami flavor is a good option for health. The umami flavor of the sea combined with licorice brings gentle nourishment and relaxation.
The Fangyuan Wetlands, located in Changhua County, is the largest and only remaining one in Taiwan. It is composed of black mud and sand because it's the estuary of the Zhuoshui River, Taiwan's longest river.
Its 5-kilometer-wide intertidal zone preserves the world's only "Oyster Farming with Yellow Cattle" tradition, which was featured on the BBC News. Here is also a stopover on the East Asian-Australasian Flyway, one of the nine major migratory routes for migratory birds.
The wild Cyclina sinensis clams in Fangyuan cannot be farmed but only rely on manually digging by fishermen. 赤嘴達人黃粮富, a professional clam digger, said「The number of the clams is a major indicator to the ecological environment changes.」
黃色 / 赤嘴蛤/ 甘味養脾
台灣濕熱,養脾為宜,海中的鮮味結合甘草,帶來和緩地滋養並使人放鬆。
芳苑溼地是世界唯一也是台灣最後僅存的泥質灘地,富含養分的黑泥灘源自濁水溪出海口沖刷,廣達5公里的潮間帶保有全球唯一的「海牛採蚵」文化,曾獲英國BBC專題報導。這裡同時也是全球候鳥九大遷徙路線「東亞澳大拉西亞飛行航道」的中繼站。
芳苑的野生赤嘴蛤全靠漁民深入潮間帶挖掘,無法人工養殖,專業赤嘴達人黃粮富面對日益惡化的生態環境語重心長表示「赤嘴蛤的數量是生態環境變遷的指標」。

/ Butterfly Ginger / Pungency / Corresponding organ:lung
In the pharmacology of traditional Chinese medicine, the food in white color nourishes the lungs, and clearing heat with pungent and cool-natured drugs.
Butterfly Ginger grows in moist areas near forests and waterfront. It can grow to the height of an adult. Its fragrance is elegant and unique but the flowering period from bud to full bloom is only one day.
Butterfly Ginger dishes are a signature dish in Hakka cuisine. The entire plant of Butterfly Ginger is edible, and its rhizomes have a gingery flavor. It's one of the most representative plants in Taiwan, a country with many mountains and rivers. Some organic farms use Butterfly Ginger as fences, providing windbreaks and serving as habitats for various species.
白色 / 野薑花/ 辛味養肺
白色養肺,辛味幫助發散、活血與行氣。
野薑花是薑科植物,生長於林邊水岸潮濕地帶,生長可至成人高度,花香清雅獨特,從花苞到盛開,花期僅有一天。野薑花全株可食,野薑花料理在客家飲食文化中具有悠久的歷史,根莖帶有薑味,是多山多水的台灣最具代表性的植物之一。許多有機農田則以野薑花作圍籬,除了防風,還兼做各種生物的生態棲地。

/ Black mangrove Liquor / Sourness / Corresponding organ:liver
The sour taste, with warmth and subtle acidity has the effect of replenishing blood and nourishing liver, gathering the lost essence and energy of the body in Traditional Chinese Medicine.
Black mangrove is the most widely distributed mangrove plant in the world. The Black mangrove lives on Fangyuan Coast was mistakenly planted in wetlands, affecting the intertidal zone ecology. During the massive project of removing the Black mangrove, #台灣生態飲食設計中心 collaborate with a distillery 恆器製酒 to make Black mangrove Liquor by using the leaves of Black mangrove soaked in high-concentration sweet potato liquor for half a year and then distilled to extract the flavor, becoming the transparent green Black mangrove Liquor.
We use this liquor as the main ingredient made into syrup with some” five-flavor fruit”(a traditional Chinese herbal with a sour flavor) and the coastal plant sea purslane.
綠色 / 海茄冬酒/ 酸味養肝
溫潤與隱約的酸,在中醫藥理中能收斂固澀。
海茄冬樹屬固沙植物,錯種在芳苑海岸濕地上的海茄冬致使潮間帶濕地生態巨變,在移除海茄冬的長期工程中,生態飲食設計中心攜手恆器製酒以移除的海茄苳做出運用,移除的海茄苳葉以高濃度地瓜原酒浸泡半年萃取風味,經過蒸餾成為透綠的海茄冬酒,加入濱海植物海馬齒莧與中藥材五味子熬煮製成琥珀糖。

/ Red Leaf Sorrel / Bitterness / Corresponding organ:heart
Taiwan's summers are very long, and bitter foods are important for nourishing the heart in daily life. Bitter foods can clear away heat, relieve restlessness, and reduce edema, and can also help with calm thinking.
We use Red Leaf Sorrel and beetroot from 番挖水耕農場, the ecological farm, with bitter melon together as ingredients to make candies.
Red Leaf Sorrel is extremely resilient. It loves sunlight but is afraid of heat and high temperatures. If it can survive the high temperature summer season and stimulate its desire to survive, it can bloom from autumn to early summer of the following year, and the plant will be lusher and more vigorous.
紅色 / 紅酢漿草/ 苦味養心
台灣長夏,日常養心以苦為要,苦能清熱袪躁去水腫,還能幫助冷靜思考。
以番挖農場的紅酢漿草與甜菜根製糖,與苦瓜共同熬煮,紅色酢漿草生命力極強,喜歡陽光但怕熱怕高溫,在台灣炎熱夏季常常半死不活,若能撐過高溫季節激發起求生欲,便能從秋天開花一路開到翌年初夏,植株也會更茂盛蓬勃。
