This one’s slow & steady. Good for a long afternoon and even better the next day.
You’ll need:
• 1 (20 oz) bag 15-bean soup mix (with seasoning packet)
• 1 smoked turkey leg
• 1 mixed bag collard, mustard & turnip greens
• 1 stick of butter
• 1 large onion, diced
• 1 green bell pepper, diced
• 2 ribs celery, diced
• 4 cloves garlic, minced
• 8 cups beef broth
• 1 Tbsp onion powder
• 1 Tbsp garlic powder
• 1 Tbsp smoked paprika
• 1 Tbsp black pepper
• Hot sauce, to taste
How I make it:
Rinse and sort the beans and add them to the crockpot.
Add in the turkey leg, greens, onion, bell pepper, celery, garlic and butter.
Sprinkle in the seasoning packet, onion powder, garlic powder, smoked paprika, and black pepper.
Add your greens.
Pour over the beef broth.
Cover and cook on high for about 8 hours, until the beans are tender and the house smells right.
Pull out the turkey leg, shred the meat, and stir it back in.
Finish with hot sauce if you like.
