Chicken Verde Casserole
Serves 4
Ingredients:
4 cups (14 oz) fresh cauliflower florets (8 greens)
8 tbsp low-fat cream cheese, softened (4 healthy fats)
16.5 oz cooked chicken, shredded (2 3/4 leaner)
½ C Salsa Verde (8 condiments)
½ tsp kosher salt (2 condiments)
1/2 tsp ground black pepper (1 condiment)
1 C shredded sharp reduced-fat cheddar or pepper jack cheese (1 lean)
3 oz low-fat plain Greek yogurt (1/4 lean)
1 Tbsp chopped fresh cilantro (optional)
Instructions:
1) Steam cauliflower over a small amount of water on the stove until tender. (Or, put cauliflower in a microwave-safe dish and cook for 10-12 minutes or until fork tender) Add the cream cheese and microwave for 30 seconds. Stir.
2) In a large bowl, combine the chicken, salsa verde, salt, pepper, cheddar cheese, greek yogurt, and cilantro. Stir, then add in the cauliflower-cream cheese.
3) Transfer to an ovenproof baking dish and bake in a preheated oven at 375 degrees (F) for 20 minutes. OR you could microwave on high for 10 minutes. Optional broil 5 min to brown the top.
