My new One-Pot Dinner series: Autumn Simmer. One-pot, easy, and quick meals.

Recipe:

Ingredients
2 tablespoons olive oil
3 cloves of garlic, minced
Italian Soffritto:
1 medium onion, diced
2 large carrots, peeled and diced
3 celery stalks, diced
1 sprig fresh rosemary
Salt & pepper to taste
1⁄4 cup finely chopped fresh parsley
1 bay leaf
1⁄4 cup white w**e (60ml)
1⁄2 juice of a lemon
1 cup chicken broth
2 cups cooked chicken thighs, shredded
8 oz Orzo pasta
Grated Pecorino Romano or Parmigiano Reggiano (to serve)

Directions:
In a large pan, heat the olive oil and add the vegetables, rosemary, and bay. Sauté the veg until the onion is soft and translucent, then add the white w**e. Let the w**e reduce by half, then add the chicken stock.

Bring to a boil, then reduce the heat and simmer for about 25-30 minutes, until the vegetables are tender.

Once softened, add the cooked shredded roast chicken and orzo pasta. Simmer until the pasta is cooked (about 7 minutes).

Finally, add the juice of half a lemon, season with salt and pepper to taste, and serve with more Parmigiano.

Florida is celebrating Italian American Heritage Month 🇮🇹 🇺🇸

This month, we celebrate the generations of Italian Americans who brought their traditions, family values, work ethic, and of course, incredible food (especially pasta) to communities across America.

And here in Florida, that heritage runs especially deep. Florida is home to the 5th-largest Italian-American population in the United States, and right here in Hernando County, Italian Americans make up about 10% of the population, that's the highest percentage of any county in Florida. 🇮🇹 ❤️ 🇺🇸 For those of us who call Hernando County home, that’s something worth celebrating!

Italian-American heritage is more than where our families came from. It lives in the Sunday dinners, recipes passed from one generation to the next, stories around the table, faith, family, music, traditions, and the belief that good food is meant to be shared.

At La Pasta Bowl, we’re proud to keep a little bit of that tradition alive.

Italian Roots. American Dreams. A Brighter Tomorrow.

Buon Mese del Patrimonio Italiano-Americano! 🇮🇹 🇺🇸 (Happy Italian American Heritage Month!)
