Chicken Fajita Smash Tacos 🌮 easy, delcious and so quick to make. Perfect for a midweek dinner! Ingredients (for 2): 125g chicken mince 1 tsp onion powder 1 tsp garlic powder 1 tsp cumin 2 havarti cheese slices Lettuce, shredded Red onion, finely sliced 1/3 capsicum, finely sliced 1 tbsp Fajita seasoning Roll the chicken mince into two balls. Spread each of the chicken balls onto mini taco tortillas. On high heat flip tacos, mince side down and cook until browned. Flip over on low heat crispy up the tortilla. Add cheese slices and cover with a lid to allow cheese to melt. Drizzle olive oil and saute onion, capsicum and fajita seasoning. Assemble and top with sour cream and coriander.

Chilli and Lime Quesadilla with chipotle mayo. See full recipe below 🤤 Ingredients: 1/4 red capsicum 1/4 yellow capsicum Onion, diced Chilli and lime seasoning by Seasoning 125g beef mince 1 tsp garlic powder 1 tsp paprika 1 tsp chilli flakes 1 tsp oregano 1/2 lime, freshly squeezed 2 tbsp mayo 1 tsp chipotle adobo sauce Saute capsicum, onion and chilli & lime seaoning until veggies soften. Brown beef mince and stir through remaining herbs and spices. Mix mayo and chipotle adobo sauce together and set aside. Layer tortilla in a large frying pan with veggies, meat, chipotle mayo, colby cheese and top with another tortilla. Cook on low heat until browned or cheese melts.

Spiced Chicken Flatbreads 🥙 look, the flour is great and is so nice and fresh but don't make the same mistake I did! Ingredients: 2/3 cup self raising flour (not plain flour!) 2/3 cup Greek yoghurt 1/2 tsp baking powder Pinch of salt Olive oil Sesame seeds Chicken: 1 chicken breast 1/2 tbsp paprika 1/2 tbsp garlic powder 1/2 tbsp oregano 1/2 tsp tumeric Half lemon juice Herby yoghurt: 2 tbsp Greek yoghurt 1 tsp Mingle seasoning Greek Garlic seasoning 1/2 lemon juice Onion salad: 1/2 red onion, finely sliced 2 tbsp fresh parsley 1/4 lemon juice Pinch of salt

Garlic and Ginger Chicken Brothy Rice 🍚 quick, easy, and oh-so-delicious for this cooler weather. Made using Australia’s favourite high protein bone broth. Available at Woolworths and Independent retailers. (Serves 2) Ingredients: * 500ml Campbell’s Real Bone Broth Chicken * 2 chicken thigh fillets, * 1 cup long-grain white rice, rinsed * 2 tbsp soy sauce * 2 cloves garlic, minced * 2 tsp fresh ginger, finely grated/minced * 3 spring onions, finely sliced Method: 1. In a bowl, toss the chicken thighs with 1 tbsp garlic and ginger and 1 tbsp soy sauce. Let it marinate for 30 minutes, or cook straight away if you're in a rush. 2. Add to an air fryer and cook the chicken at 180°C for 5–6 minutes per side, until browned and cooked through. Rest and slice. 3. In a pot, combine the entire 500ml pouch of Campbell’s Real Bone Broth Chicken, the remaining 1 tsp ginger, 1 garlic clove, 1 tbsp soy sauce, and the spring onion whites. Simmer on medium-low for 10–15 minutes to let the flavours fuse. 4. Cook your rinsed rice in a pot, or microwave your pre-cooked rice according to the packet instructions. 5. Place a bed of hot rice into a bowl, layer the sliced chicken on top, and pour the hot, flavorful bone broth right over everything. Top with green spring onions and fresh chilli.

Crispy Chicken Taco Boats 🌮⛵️ the most cleanest way to eat a taco, no paper towel needed here! Ingredients: 4 chicken breast tender 1 egg, whisked 1 cup cornflakes, finely crushed 2 tortilla Lettuce Tomato Red onion Kewpie Sriracha kewpie Tortilla glue Equal parts flour and water 1. Cut and shape the tortillas into boats, using the tortilla glue to stick the sides together. 2. Bake in the oven on 180°C for 5-10 minutes or until the boats start to brown. 3. Dip the tenders in egg wash and cornflakes. Cook in air fryer on 180°C for 10-12 minutes, flipping over half way. 4. Load boats with lettuce, tomato, red onion, chicken tenders and kewpie mayos!

Buffalo Glazed Chicken Wrap 🌶️🌯 spicy, cheesey and perfect for a flavourful lunch wrap! Ingredients: 3 chicken tenders 2 tbsp buffalo wing sauce 1 tsp honey 1/4 cup chicken stock Lettuce Tomato Red onion Smokey grated cheese Jumbo tortilla 1. Air fry the chicken tender according to the packaging. Stopping 2 minutes before fully cooked. 2. Simmer buffalo wing sauce, honey and water until the sauce thickens. 3. Brush over buffalo glaze to chicken tenders and continue cooking for a further 2 minutes. 4. Assemble wrap with lettuce, tomato, red onion, cheese, chicken tenders and lettuce. 5. Heat in a fry pan until lightly golden.
