Strawberry Chocolate Shell Cake

Ingredients:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 2 cups fresh strawberries, sliced
- 2 tablespoons sugar (for macerating)
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
- Chocolate shell (store-bought or homemade)
Directions:
1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to ensure easy removal later.
2. In a large mixing bowl, combine the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Give it a good whisk!
3. Add in the eggs, milk, vegetable oil, and vanilla extract. Mix on medium speed for about 2 minutes until everything is well combined.
4. Carefully stir in the boiling water until the batter is smooth (don’t worry if it seems thin; that’s normal).
5. Divide the batter evenly between the prepared pans and pop them in the oven. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for a bit before transferring them to a wire rack.
6. While the cakes cool, let's get those strawberries ready! Toss the sliced strawberries with 2 tablespoons of sugar and let them sit for about 10-15 minutes to get juicy and delicious.
7. For the whipped cream, in another bowl, beat the heavy cream with powdered sugar and vanilla extract until soft peaks form. Whip it, whip it good!
8. Once the cakes have completely cooled, place one layer on a serving plate. Spread a generous layer of whipped cream on top, followed by a mound of those fabulous macerated strawberries.
9. Place the second cake layer on top and frost the top and sides with more whipped cream. Now, it’s time for the showstopper: drizzle or pour chocolate shell over the top!
