Hi all! My sourdough starter is almost 4 weeks old, it just recently started rising again after being dormant since day 7 . It hasn’t doubled yet; but I notice it rises less some days. Is that normal? My house is colder at like 68 so I know it takes longer to establish. But will it consistently rise once isn’t established or will it always vary? Also, on days I’m planning to bake, will I need to take measures to make sure it rises? I’m a little confused on that bit. I’m too afraid of house fires so I leave nothing plugged in, I’m always in and out of the house so any type of warmer is not an option. Thank you!
