The part no one sees, behind the scenes ✨
Before my suet ever touches a rendering pot, I carefully go through it piece by piece, trimming away as much meat, connective tissue and other non fat material as possible.
🐮And yes, did you know there can also be scent glands mixed in around kidney fat? Well now you know!
🤎This prep work is one of the reasons I’m able to get such a clean, beautiful render from the very beginning! I’m not just chopping up a block of suet and throwing the whole thing into a pot. I’m picky!!!! If it doesn’t look like clean fat, it goes to the chickens & dogs!
If you’ve ever purchased tallow that had a very strong, beefy or unpleasant odor, leftover meat, tissue or scent glands can contribute to that smell. Along with the quality and handling of the fat and the rendering process!
Although, this might be the worst part of my job, you will NEVER catch me skipping this step!!! 🙅🏼♀️
It takes considerably more time, but this is what goes into creating clean, mild, beautifully rendered beef tallow that becomes every jar of Sage and Tallow Co. 🌿🤎
🤎The quality of the finished products start LONG before the first render!
