Ingredients
For the Seasoned Chicken
π 2 chicken breasts, cut into bite-sized chunks
π« 1 tbsp olive oil
π§ 1 tsp garlic powder

π§ 1 tsp salt

πΏ 1 tbsp fresh parsley, chopped
For the Home Fries
π₯ 4 medium red potatoes, cut into cubes
π« 1 tbsp olive oil
π§ 1 tbsp butter
π§ Β½ tsp salt
β« ΒΌ tsp black pepper
πΆοΈ Β½ tsp paprika
For the Scrambled Eggs
π³ 8 large eggs
π₯ ΒΌ cup (60 ml) whole milk
π§ 1 tbsp butter
π§ Β½ tsp salt
β« ΒΌ tsp black pepper
πΏ 1 tbsp chopped parsley
Instructions
Preheat the oven to 425Β°F (220Β°C). Toss the potato cubes with olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for 20β25 minutes, turning halfway, until golden and crispy.
While the potatoes cook, season the chicken pieces with garlic powder, smoked paprika, onion powder, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 6β8 minutes, turning occasionally, until browned and the internal temperature reaches 165Β°F (74Β°C).
Sprinkle the cooked chicken with fresh parsley and keep warm.
In a bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
Melt butter in a non-stick skillet over medium-low heat. Pour in the egg mixture and gently stir with a spatula.
Continue cooking for 3β4 minutes, folding occasionally, until soft and fluffy. Remove from heat while still slightly creamy.
Plate the roasted potatoes, scrambled eggs, and seasoned chicken. Garnish with additional parsley and freshly cracked black pepper.
Notes & Variations
Add shredded cheddar cheese to the eggs during the final minute for extra richness.
Sweet potatoes can replace red potatoes for a healthier twist.
A dash of hot sauce pairs perfectly with the eggs and chicken.
