You don't need a bakery or hours in the kitchen to make authentic Turkish pastry. This “Tavada Peynirli Börek “ is a crispy, savory cheese pie made right on the stovetop using simple grocery store ingredients. It features a golden, flaky crust with a beautifully soft, melted cheese center. Perfect for your next weekend brunch! 🍳🥂
🍳 Tavada Peynirli Börek (Pan-Seared Cheese Pastry)
Ingredients:
Pastry: 6–8 sheets of Phyllo Dough (thawed) + 1 tbsp butter for the pan.
Liquid Sauce: 1/2 cup milk, 1 egg, 4 tbsp olive oil or melted butter (whisked together).
Filling: 1 cup crumbled Feta cheese + 1 cup Shredded Mozzarella (highly recommended for that perfect cheesy stretch!) + 1/4 cup finely chopped Fresh Parsley (optional, for a fresh herb flavor).
Quick Instructions:
Layer: Grease a 10-12” non-stick skillet with butter. Lay down 2 sheets of phyllo, letting the edges hang over the sides. Brush with the liquid sauce.
Fill: Crinkle 3-4 more sheets inside the pan, brushing sauce between layers. Spread the cheese (and optional parsley) mixture evenly on top.
Fold: Fold the hanging edges back over the cheese. Place 1-2 final sheets on top, pour the remaining sauce over everything, and let it soak for 5 minutes.
Sear: Cover and cook on medium-low heat for 8–10 minutes until the bottom is golden. Flip using a flat plate, and sear the other side uncovered for 6–8 minutes until crispy.
Slice it like a pizza and serve warm. Enjoy! Afiyet olsun!

Selam! Çılbır (Sultan’s breakfast) is very easy Turkish/Ottoman recipe, enjoy!

Ingredients
Eggs: 2 large eggs
Yogurt Base: ½ cup Plain Greek yogurt (room temp), 1 minced garlic clove, pinch of salt.
Spiced Butter: 2 tbsp butter, 1 tsp red chili pepper (or paprika + pinch of cayenne).
Instructions
Prep Yogurt: Whisk the yogurt, garlic, and salt until smooth. Spread it onto a shallow serving plate.
Poach Eggs: Simmer water with a splash of vinegar. Gently slide in eggs and poach for 3 minutes (runny yolk). Drain and place them directly onto the yogurt.
Brown Butter: Melt butter in a small pan until it bubbles. Stir in the red chili pepper for 30 seconds until the oil turns red and fragrant.
Finish: Drizzle the hot spiced butter over the eggs. Garnish with fresh dill or parsley.
Serve immediately with crusty sourdough or warm pita for dipping.

🇹🇷🔥 Burcu’s Kitchen: Easy Homemade Turkish Döner!

Want real Turkish döner kebab at home? Try this quick and delicious version everyone can make!

Ingredients:
• 1 lb ground beef
• 1 small onion
• 3 garlic cloves
• 1 tbsp tomato paste
• 2 tbsp yogurt (plain)
• Salt, pepper, paprika, cumin, oregano

How to Make It:
1. Blend onion + garlic. Don’t drain.
2. Mix with beef, yogurt, tomato paste + spices.
3. Shape into a tight log, wrap, and freeze 1–2 hrs.
4. Slice very thin and cook in a hot pan until crispy.
5. Serve in lavash with tomatoes, onions, pickles + tzaiki yogurt sauce.

So good, so easy , your kitchen will smell like Istanbul! 😍🌯🔥

Chopped Cucumber Tomato Salad

Ingredients:

2 cups cucumber, diced (Persian or English cucumbers work great)

2 cups ripe tomatoes, diced

1/2 red onion, finely chopped

1–2 tbsp fresh parsley or cilantro, chopped

1–2 tbsp olive oil

Juice of 1 lemon or 2 tbsp red wine vinegar

Salt & black pepper to taste

Optional Add-ins:

1 clove garlic, minced

1/2 bell pepper, diced

Crumbled feta cheese

Chopped mint or dill

A pinch of sumac or za'atar (for Mediterranean flair)
