Air Fryer Chicken Bacon Ranch Wrap with a Skinny Bang Bang Sauce and air fried potatoes and onions. Oh the smell in my house right now! So good!! Spray air fryer with nonstick spray and preheat. Cut up a few potatoes and an onion and toss in olive oil, 2 cloves fresh minced garlic, oregano, grated Parmesan cheese, onion powder and a pinch of salt and pepper. Air fry for 15-20 minutes at 360 degrees, stirring halfway through. Remove from air fryer. Cut up 2 chicken breasts into small pieces. In a bowl coat with 1/2 cup of plain Greek yogurt, few dashes of hot sauce, garlic powder, onion powder, smoked paprika and a little lemon vinaigrette. Place in air fryer at 360 and air fry for 10-12 minutes. Internal temp of chicken should be 165 degrees. On a tortilla or wrap(I’m using a keto friendly high fiber one) spread on low fat ranch dressing, top with bacon, spinach and chicken. Roll up and cut in half. Lunch is ready! If you want a dipping sauce make extra bang bang sauce to keep on hand. Mmm mmm.

Pad Thai with Chicken and Peanut Sauce. Makes enough to prep for a few more meals this week. This is a low calorie peanut sauce using PB Fit but you can substitute whatever peanut butter you like. Cook your rice noodles according to package directions. I only made 1/2 a box . In a skillet over medium to medium high heat melt 1 tbsp coconut oil. Cook 2 thinly cut chicken breast cutlets in the skillet until cooked through , just takes a few minutes. Remove from skillet. Add 1 tbsp olive oil and add 1 thin sliced red pepper, 1 cup shredded carrots and 2 eggs. Season with salt and pepper. Sauté until eggs are cooked. Top with 1 tbsp fresh chopped cilantro. Make the sauce by mixing together 1/3 cup PB Fit, 2 tbsp lime juice, 1 tbsp soy sauce, 1 tsp fresh grated ginger, 1 clove minced garlic, 1 tbsp maple syrup, add water or almond milk in small amounts while whisking to get your desired consistency. If you like a little heat you can add in sirracha or red pepper flakes. Place noodles in a bowl and top with veggies, chicken and sauce. If you want to add chopped peanuts just before eating it gives it a nice crunch. Yum! This made enough for me to prep 3 servings. I used 2 cup glass containers.

Breakfast Sandwich meal prep. Be as creative as you like with this one!! Mine is a simple egg and spinach with salt and pepper but you can use whatever greens you like and spices. I would avoid using watery vegetables…gets too spongy when baked. Preheat oven to 400. In a blender blend together 1 cup of spinach leaves with 6 eggs and 1/2 cup of egg whites(or 10 eggs). I used egg whites because I had them in the refrigerator and needed to use them. Line baking sheet with parchment paper. Cut up 8 turkey sausage links or patties(I used both because it’s what I had). Spread evenly on top of parchment. Pour egg mixture on top. Bake for 15 minutes or until center of eggs are no longer jiggly. Cool and cut into a circle with a biscuit cutter or drinking glass. Place a slice of cheddar cheese on an English muffin(I’m using sprouted grain muffins ) half then top with the egg and the other half of muffin. Wrap in parchment paper or wax paper, refrigerate or freeze. This will make 10-12 circles. I use the leftover scraps of egg for egg bowls, add in some fresh veggies, potatoes and salsa…endless possibilities. When ready to eat your sandwich microwave in the paper for 20-30 seconds if refrigerated, 40-50 if frozen. If heating in air fryer remove paper and heatat 360 for 6-8 minutes.

I love roasted vegetables! Haven’t decided what meat I’ll serve with these yummy veggies but the possibilities are endless! Maybe going to add some smoked sausage about half way through and make it a complete sheet pan meal or serving as a side with grilled chicken. Use whatever vegetables you like and seasoning. Cut them all about the same size for more even cooking times. Preheat oven to 400 degrees. Line sheet pan with parchment paper. Place veggies on the sheet pan, spritz or toss with olive oil or avocado oil and sprinkle with your favorite seasonings. Oil generously to keep them from drying out. I seasoned these with salt, pepper and Kinder buttery steakhouse seasoning. Yum!! Roast for 35-45 minutes until vegetables are your desired tenderness or crispiness. Get creative with your dinner tonight!

Chicken Meatballs Marinara. I love a simple meal that comes together in 30 minutes or less! In a skillet over medium heat place 2 tbsp olive oil with 1/2 sliced onion, 1 1/2 cups of sliced sweet bell peppers and a 1lb pack of chicken meatballs. Season with a pinch of salt and pepper. Of course you can use any type meatballs you want to buy but these are delicious! Sauté for about 10-15 minutes until veggies are softened and meatballs are browned a little. Add 1 jar of marinara sauce to the skillet, 1/4 cup of grated Parmesan and 1/2 cup shredded mozzarella. Sprinkle a little oregano on top. Cover with lid, reduce heat to low and simmer for 15 minutes. Eat by itself as a low carb meal or serve over pasta or rice. I’m serving over chickpea pasta today 😋

Air fryer Chicken Thighs with Veggies. Preheat air fryer then spray the basket with olive oil. In a small bowl Mix together a tsp to tbsp each of smoked paprika, onion powder, garlic powfer and greek seasoning. Coat boneless skinless thighs with your seasoning on both sides. Place in air fryer basket and spray tops with olive oil. Cook at 380 for 12 minutes. Flip chicken and cook for 5 more minutes. Internal temp of chicken should be 165. Remove. Add broccoli and carrots to the basket, spray with olive oil, sprinkle on grated Parmesan cheese and a little salt and pepper. Cook for 6 minutes at 350. Delish!

Chicken Parmesan Patties and Italian Meatball Wrap. I had a 1lb package of ground chicken in the refrigerator and a serious craving for Italian food….so this is what I came up with. I turned this into a few healthy, satisfying meals 😊❤️ Preheat oven to 450 and air fryer to 350. Mix 1 lb ground chicken with 1 egg, 2tbsp Italian bread crumbs, 1/4 cup Greek yogurt(for moisture), 1/4 cup grated Parmesan cheese, 2 cloves of fresh minced garlic, 1 tsp each of garlic powder, onion powder, oregano and fresh chopped basil. Mix well, form into 4 patties. Spray air fryer with nonstick spray(I use olive oil). Place patties in air fryer and cook for 8 minutes at 350. You’re going to finish in the oven so they won’t be completely cooked through to 165 degrees but they will reach that temp in the oven. Remove and place in a casserole dish. Top with marinara sauce , mozzarella cheese and a sprinkle of Italian seasoning. Bake at 450 for 10 minutes. I like the cheese browned so I turned my oven to broil for 1 minute at the end to brown the tops. Serve with a salad. Yum! Use the remaining chicken to form into meatballs, place in the air fryer and cook for 9 minutes at 350. Internal temp should be 165. Spray a nonstick skillet with olive oil over medium hear. On a lite Italian flatout wrap place a spoonful of marinara, spinach and mozzarella. Cut two meatballs in half and place on top of cheese. Roll up like a burrito. You could eat as is but I like my wrap crispy and warm. Place seam side down in skillet for a minute on each side or to desired crispiness. 😋😋 perfect lunch!

Chicken Fajita Bowl. I have a meal prep idea for you this week…it’s what’s for dinner tonight at work and it’s super easy to put together and I’ll reheat tonight and top with a guacamole sauce. Cook your brown rice, place 1 cup in your take out container. Sauté peppers and onion in a tbsp olive oil until tender. Add to your container. In the same skillet heat your chicken(I used fully cooked already fajita seasoned John Soules chicken strips from Food Lion). You can skip this step since it’s already cooked but I like to brown it a little on each side. Place in container. I’m using chickpeas but pinto or black beans would be a good too. Take a 1/2 cup of drained chickpeas and toss with a pinch each of cumin and smoked paprika. Place in container. To make a sauce I’m using already made guacamole and stirring in a little sour cream and fresh lime juice. Stir and drizzle on top of your meal when you’re ready to eat. Good stuff y’all!

Vegetable Beef Soup. Feeling like a soup day! This recipe is super simple and comes together so quick. In a stock pot over medium high heat brown ground beef and a diced or sliced onion in a tbsp olive oil. Drain grease if needed when beef is done. Return to pot. Add in 1 cup each of corn, mixed peas and carrots(I used frozen) and 1 cup of sliced cabbage. Mix well, season with a pinch of salt and pepper, 1 tsp each of garlic powder, onion powder and smoked paprika. Add in 4 cups of chicken stock(or beef stock). I only had chicken stock so to add beef flavor I put in 1 tbsp of better than bouillon beef flavor. I probably would’ve added it to the beef stock too 😬 it’s so good! Cover and simmer for 30 minutes. I added a little cooked pasta because I like the texture with pasta….and I used the fiber gourmet elbow noodles. I added in 1 cup of cooked noodles. They’re low calories, high fiber and I love them. I have never seen them in stores but you can buy online. Worth checking out! Grab some saltine crackers or cornbread and enjoy a warm bowl of soup 🥣

Egg Bites. Tonight I prepped my breakfasts for the week. You can be so creative with these with whatever flavors you love. I made 2 batches….Feta, Spinach and Sundried Tomatoes and then Canadian Bacon, Onion and Gouda. Preheat oven to 375. Spray muffin tin with nonstick spray. Whisk 3 eggs with 1 tbsp milk, and 1/4 cup egg whites. Stir in a little fresh chopped spinach. Season with a teaspoon of Italian seasoning, pinch of salt and pepper. Pour into 6 muffin wells leaving a little room at the top. Drop in a little feta and sundried tomatoes into each egg well. For the others place shredded Gouda and chopped Canadian bacon into the remaining 6 muffin wells. Whisk 3 eggs, 1 tbsp milk and 1/4 cup egg whites and season with a pinch of salt and pepper and 1 teaspoon of sage. Pour on top of the bacon and cheese. Top each one with chopped green onion. Bake in oven for 20-25 minutes until eggs are set. Let cool and remove from your muffin tins. Refrigerate. I’ll take out a few and reheat in the air fryer each morning for breakfast with a little fresh fruit and Greek yogurt. You can reheat in the microwave but they’ll be soggy. I like them a little crispy on the outside so the air fryer is perfect for these!

Chicken Burrito Casserole. Preheat oven to 375. I had two large chicken breasts left over from dinner yesterday(they were baked in the oven) so I shredded those, placed in a skillet over medium heat with a cup of salsa and a few tbsp of taco seasoning. Mix well and when warmed add in 1 cup of refried beans. Place a spoonful on a tortilla, add a little shredded cheese(I’m using Monterey Jack). Please shred your cheese fresh!! It’s so much better tasting! Roll up into a burrito. Now you could stop right there and eat your burrito but if you’re southern like me you turn it into a casserole 😬. Spray a casserole dish with nonstick spray, place your burritos in the dish close together. Top with enchilada sauce, green chiles and a sprinkle of cheese. Cover with foil and bake for 20 minutes. Remove foil and bake 10 more minutes. Cool and cut into squares….burrito squares! Serve with sour cream, fresh cilantro, lime, whatever toppings you love. Enjoy!

Ground Chicken Caprese. Satisfying my Italian craving today 😊 and I love a one pan skillet meal! Brown 1lb of ground chicken in a skillet over medium heat with a tbsp olive oil, 1/2 chopped onion and 2 cloves of fresh minced garlic. Season with 1 tsp each garlic powder and onion powder. Add in 2 sliced Roma tomatoes, 1 tbsp fresh chopped basil, 1/2 cup marinara sauce and 2 tbsp grated Parmesan cheese. Top with fresh mozerrella, cover with lid and simmer for 20 minutes. Delicious! I’m eating it as is for a low carb meal but of course you can serve over pasta as well. Delicious!
