Soft Milk Bread Rolls Recipe
Ingredients
• 4 cups bread flour (500g)
• ¼ cup granulated sugar (50g)
• 1 tsp salt
• 2¼ tsp instant yeast (7g)
• 1 cup warm milk (240ml)
• 1 large egg
• ¼ cup unsalted butter, softened (56g)
• 2 tbsp milk powder (optional)
• 2 tbsp heavy cream (optional for extra softness)
For Egg Wash
• 1 egg
• 1 tbsp milk
Instructions
In a large bowl, combine bread flour, sugar, salt, yeast, and milk powder.
Add warm milk and egg, then mix until a dough forms.
Knead for 8–10 minutes until smooth and elastic.
Add softened butter gradually and continue kneading until the dough becomes soft and stretchy.
Cover and allow dough to rise for 1–1½ hours or until doubled in size.
Punch down the dough and divide into equal portions.
Roll each portion into a rope shape.
Using a dough scraper or knife, make several cuts across the dough without cutting all the way through, just like the picture.
Gently stretch and roll into long segmented bread shapes.
Place on a lined baking tray.
Cover and allow to proof again for 30–45 minutes until puffy.
Brush with egg wash.
Bake in a preheated oven at 175°C (350°F) for 18–22 minutes until golden brown.
Brush with melted butter immediately after baking for a shiny soft finish.
Allow to cool slightly before serving.
