Jamaican fusion chili to warm up in the winter weather. It took a lot of estimating and adding some things to build the flavor. I used angus sirloin steak, but I would like to use oxtail next time. The spices can compete with each other a bit so it was a slow and steady process. The immediate chili and pepper flavor has the traditional flavor, followed by the hint of all spice. Then, the heat and flavor from the jerk seasoning and curry powder finish off the bite and lingers. Each bite is full of flavor and texture. This one is a keeper.

Breakfast on a budget can get really boring. Switch it up with breakfast tacos. These tacos have the following ingredients: scrambled eggs, bacon, onion, poblano pepper, cheese and chipotle sauce on a flour tortilla. The cost: $0.86 per taco. Total ingredient cost: $13.81. You will even have leftovers for other things. A package of premade burritos averages $1.11 for a burrito and these tacos are a similar weight. Additionally, there is no long list of chemicals in these tacos. Eating clean CAN be affordable.

Evolving Kitchen was formerly known as The Traveling Chef. My experiences trying different national and worldly cuisines were my driving force in being creative in the kitchen and feeding my family and friends. Recently I have shifted my focus to supporting local businesses and my community directly.

I was blessed to be offered a position as a community chef for a local non profit organization called Baby Steps Family Assistance. Beside assisting families with clothing and home needs, we work with the food insecure with our food pantry and hosting community meals. This meal will be a free Thanksgiving harvest meal featuring all of the traditional holiday foods, charcuterie boards, appetizers, vegan options and delicious desserts.

Moving forward, I will be teaching community members, youth groups, and working individually with families who need help budgeting, learning basic skills and managing the changing economic climate. With food standards and market prices constantly fluctuating, the way we cook and how we use food is ever evolving. It is time to shift focus to navigating these changes and creating beautiful and healthy meals that the average family can afford.

802 Soul Kitchen in Brattleboro, VT for the win. I have had a lot of friend chicken in my life. I love chicken thighs and a good crunchy wing. Chicken breast strips are often dry, and too frequently I get tenderloins with the tendon still attached. These chicken strips were the best I have ever had. The first bite was crunch, seasoning and juicy chicken. The coating is top notch. Looking at the chicken inside, it was juicy and had those little drops you see in the pan juices of a roasted chicken. The Mac and cheese was cheesy, gooey and the pasta cooked properly. The cake balanced that richness out with something sweet. Next time we will arrive early for smash burgers, yams and whatever else we missed. This meal brought me back to Atlanta. There was a small soul food place with the best baked beans, amazing Mac and cheese and crispy burnt ends.

Sandwhiches and steaks have been the trend recently. We made delicious Ruben’s on Rye, light on the sauerkraut, and grilled cheese with mozzarella, provolone, chicken and Vegetaball’s pesto on sourdough. Adding roasted red peppers, sun dried tomatoes or fresh tomato gives it a little extra kick and takes it different directions.

We love our charcoal grill. We had delmonicos, NY strip steaks and a porter house. While the grill was going, I decided to get some poblanos grilled for an upcoming batch of chile rellenos. These are a bit small, but locally grown and can be easily stuffed.

Finally, we tried a simple recipe for meatballs. It uses grape jelly and sweet chili sauce to make a sweet and sour sauce. We had some cider jelly left so we used that, then the difference used grape jelly and Mae Ploy sweet chili sauce. Throw it in the crock pot and a few hours later you have delicious meatballs. These days, simple seems to be the way to go.

Super food kinda day.

Salad #1: kale, red cabbage, red onion, shredded carrots, blueberries, dried cranberries, pine nuts, sunflower seeds with raspberry vinaigrette. I use skinny girl brand because it’s perfect and has no sugar so it doesn’t make the salad crazy sweet.

Salad #2: kale, green and purple cabbage, shredded carrots, kholrabi and honey crips apple sliced on. The mandolin, coarse chopped honey roasted almonds and sunflower seeds with honey mustard vinaigrette.

3 Tbs boars head honey mustard
1 Tbs Dijon
1/2 tsp whole grain brown mustard
4 Tbs cider vinegar
1 Tbs lemon juice
2 Tbs honey
2 cloves of garlic grated or minced
1/2 tsp salt
1/4 tsp black pepper
