By the end of the week, we will be hitting colder temperatures again here in Texas. I’m fully prepared to keep my family warm with this minestrone soup! As far as soups go, this one comes together fairly quickly. You could make this happen on a weeknight and have leftovers for later in the week. 🙌

Personally, I’m a big fan. I consider it quality time with my girl. She loves helping with putting things in the cart and we use our time as an opportunity to talk about where our foods come from. We talk about trying new foods and about foods that are more common in other parts of the world.
