BAKED HONEY CHICKEN

Ingredients:
- 2 lbs chicken wings
- 1/2 cup honey
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon rice vinegar (optional)
- Salt and pepper to taste

Instructions:
Heat oven to 400°F (200°C).
Whisk together honey, soy sauce, olive oil, garlic, and ginger.
Add chicken to the marinade and mix well.
Bake for 25-30 minutes or until cooked through.

THAI SHRIMP (Green) CURRY

Ingredients:
- 1 pound large shrimp (i used fresh water shrimp)
- 2 tablespoons vegetable oil
- 2-3 tablespoons Thai green curry paste
- 2 cups coconut milk
- 1 cup water or chicken broth
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1/2 teaspoon ground cumin
- 1/4 teaspoon turmeric powder
- eggplant, cut into serving pieces

Instructions:
1. Heat oil in a pan over medium heat. Add curry paste and cook until fragrant.
2. Add coconut milk, water or broth, fish sauce, sugar, cumin, and turmeric. Stir well.
3. Bring to a simmer and cook for 5-7 minutes or until the sauce thickens.
4. Add shrimp and eggplant, cook until shrimp is pink and cooked through.
5. Season with salt and pepper to taste.
6. Garnish with fresh thai basil leaves and serve with steamed rice.

PORK RIBS CALDERETA

Ingredients
- 2 pounds pork ribs, cut into serving pieces
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup liver spread or liver paste
- 1 cup pork or beef broth
- 1 tablespoon tomato paste
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon paprika
- 2-3 pieces chili peppers or chili flakes (optional)
- 2 tablespoons grated cheddar cheese (optional)
- Potatoes, carrots, or bell peppers for added flavor

Instructions
1. Heat oil in a large pot over medium heat. Sauté garlic and onion until fragrant.
2. Add pork ribs and cook until browned. Remove excess oil if needed.
3. Add diced tomatoes, liver spread, broth, tomato paste, black pepper, salt, and paprika. Stir well.
4. Bring to a boil, then reduce heat and simmer for 30-40 minutes or until the ribs are tender.
5. Add chili peppers or chili flakes if desired.
6. Taste and adjust seasoning as needed.
7. Serve hot with grated cheese and steamed rice.
