Old-fashioned Almond Macaron Recipe

Macaron Ingredients:
3 cups Almond flour
3 large egg whites
1 1/3 cups granulated sugar
2 tsp vanilla essence
3 tsp almond essence
1/4 tsp salt
1 teaspoons lemon zest
1/2 icing sugar
1/2 slice/ crushed almonds

Instructions
1.Preheat the oven to 350 degrees. Line cookie sheets with parchment paper.
2.In a medium bowl mix almond flour and granulated sugar together and pulse in the food processor set aside.
3.In another large bowl whisk egg white with vanilla, almond essence, lemon zest and salt into a soft white, not until stiff.
4.Add almond flour to the egg white mixture and keep stirring until the dough comes together thoroughly. Cover and allow almond flour to absorb the egg for about 15 minutes.
5.To make the cookie balls, scoop the dough into wet hands to shape. (dough will be sticky) Then roll in the icing sugar or sliced almonds and place on a cookie sheet.
6.Using a spatula or any flat surface, flatten cookies to about 1/2 inch height and bake for 15-18 minutes or until golden brown. Check the cookies after 12 minutes.
7.Let cookies cool before serving. Enjoy!

Cinnamon cake with caramel swirl! Made this for my son's birthday πŸŽ‚ πŸ‘©πŸΏβ€πŸ³πŸ‘¨πŸΏβ€πŸ³

Cinnamon cake with caramel swirl recipe! πŸ‘‡πŸΏπŸ‘‡πŸΏπŸ‘‡πŸΏ

Cake ingredients:
2 1/2 cups of flour
1 1/3 cups granulated sugar
1/3 light brown sugar
2 sticks butter
1 cup sour cream/yogurt
1/2 cup buttermilk or milk
3 eggs
1/2 tsp salt
1/2 tsp baking soda
2 tsp baking powder
1 1/2 tsp vanilla extract
3-4 tbsp of caramel (for decorating)

Streusel ingredients:
1/2 cup brown sugar
1 1/2 tbsp cinnamon (or as much as you like)
6 tbsp butter (optional browned butter)
1 cup unbleached flour

Whipped cream ingredients:
1/2 pack of gelatin (dissolved with 1 tbsp warm water)
2 cups heavy whipping cream
1 tsp vanilla extract
3 tsp of caramel (for sweetening)

Streusel Instructions:
1. In a saucepan, melt butter on low - medium heat and allow the butter to slightly brown and remove quickly from heat and allow to cool (this can be done ahead of time).
2. In a bowl, mix brown butter, brown sugar, flour, and cinnamon with a fork or by hand incorporating until butter is blended in.
3. Set aside.

Instructions:
1. Preheat the oven to 350 F lined pan with parchment paper or grease a 13x9 cookie sheet (or desired pan).
2. In a separate bowl whisk together flour, baking powder, baking soda, salt, and then set aside.
3. In a large bowl cream butter and sugar until light and fluffy.
4. Begin adding eggs one at a time and remember to scrape the sides down.
5. Mix in vanilla and sour cream thoroughly.
6. Gradually add flour mixture alternating with the 1/2 cup buttermilk/milk and do not over mix.
7. Scoop batter to pan, spread evenly in pan, and cover with Streusel.
8. Bake for 20-25 minutes (check with toothpick at 20 mins)
9. Let cool, then cut the cake into 2 circles or your desired shape.
10. Cover the first layer with caramel.
11. Whip your whipped cream ingredients together while slowly adding your dissolved gelatin, until you can form a peak (not too much or it will turn to butter).
13. Layer your whipped cream over top of the caramel. Then place the 2nd layer of cake on top.
14. Decorate sides with remaining whipped cream.
15. Enjoy!

Sweet Potato Cranberry cinnamon Rolls recipe

Dough Ingredients:
3 cups flour
1 tablespoon baking powder
1 1/4 teaspoon salt
1 packet active dry yeast
1 cup mashed sweet potato
1/4 cup sugar
1 egg
1 cup cream/milk
1 teaspoon vanilla
6 tablespoons Butter

Filling ingredients:
See Cranberry Mango Chutney recipe
2-2 1/2 cups or Cranberry Mango Chutney
1-2 tablespoons of Cinnamon

Mascarpone Frosting:
4 oz. (1/2 cup)mascarpone cheese
2 1/2 cups powdered sugar
5-6 tablespoons butter (softened)
1 teaspoon vanilla extract
1/4 teaspoon salt
1 teaspoon lemon juice

Dough instructions:
1. In a large mixing bowl, mix together milk, egg, vanilla, yeast and sweet potato.
2. Whisk in baking powder and salt to the 3 cups of flour. Begin adding flour to the milk mixture in the bowl, mixing until it is very stiff. If you are using a stand mixer, continue to mix for about 3 minutes then start adding the butter in chunks until all mixed through. (It’s okay to see some of the butter in the dough)
3.Drizzle a little oil over the dough, cover and let rest for an hour or until doubled in size.

Filling
4. Use your favorite cranberry sauce or see my Cranberry Mango Chutney recipe. (If using the Chutney recipe , cook on stovetop for about 20 minutes, set aside and let cool)
5. Once cooled, pulse blend it to an almost smooth consistency.
6. Turn the dough onto a floured surface and roll out to about 1/4 inch thickness.
7. Spread the cooled sauce thinly over the dough leaving an inch from the opposite end of the roll. Sprinkle with cinnamon and roll the dough into a log shape.
8. Cut the log into 1-inch slices, place in your greased baking dish, cover, and let rise for an hour or double in size.
9. Preheat the oven to 350Β°F; bake rolls for 25 minutes until golden brown.

Frosting instructions:
10. While rolls are baking, cream butter and mascarpone cheese together then add rest of the ingredients, mixing thoroughly until combined smoothly. Icing should be thick and creamy.
11. Remove rolls from the oven and let cool before frosting!
12. Enjoy!

Note: Cream cheese can be substituted for mascarpone cheese.

GG Cranberry Mango Chutney πŸ‘‡πŸΏπŸ‘‡πŸΏπŸ‘‡πŸΏ

Recipe:
3-4 cups Cranberries
1 cup granulated sugar
2 whole mangos peeled and diced
1 tsp grated fresh ginger
1 tsp orange zest
1/2 tsp vanilla extract
1/8 tsp or a Pinch of salt
Mint leaves for decorating (optional)

Instructions:
1. Wash and strain Cranberries. Chop cranberries in the food processor medium, not fine. Peel and dice mangos to about 1/4 inch cubes.
2. Place in a mixing bowl and add your grated ginger, your vanilla extract and orange zest, salt, sugar and mix it thoroughly.
3. Garnish with your diced mint leaves!
4. Enjoy!
Note: The sugar will produce natural juice from the fruit.
