TURKEY STUFFED PEPPERS

3 medium bell peppers, 1 T olive oil, 1 cup chopped onion, 1/2 cup chopped celery, 1/2 cup chopped carrot, 2T minced garlic, 1 lb ground turkey, 3/4 cup riced cauliflower (or cooked rice,) 1t Italian seasoning, 1/2t salt, 1/2t pepper, 1 can tomato sauce, parsley, diced. Preheat oven to 350. Slice peppers vertically and remove seeds. Sauté in olive oil onion, celery, carrot until softened, add turkey and cook until browned. Add riced cauliflower and garlic and cook until fragrant stir in seasonings. Place peppers into a baking dish and fill with the meat and veggie mixture. Pour tomato sauce on top. Add 1/4 cup water or vegetable broth to bottom of dish. Cover and bake for 20-25 minutes until peppers are softened. Top with parsley.
