This year for Father’s Day my dad called and requested a key lime cheesecake. The man loves key lime pie, so this seemed like the perfect way to celebrate him.
Complete with a thick, buttery graham cracker crust this cheesecake is refreshing, tangy, and the perfect celebration dessert. I made mine extra special by making a few candied lime slices to add on top. Top with some fresh homemade whipped cream to cut the sweetness and you’ll be in heaven. I dare you to give it a try.
Whipped Cream Topping
- 1 cup heavy cream, cold
- 2 tbsp granulated or powdered sugar
- ½ tsp vanilla extract
Graham Cracker Crust
- 1 ½ cups graham cracker crumbs
- 5 tbsp unsalted butter, melted
- ¼ cup granulated sugar
Key Lime Cheesecake Filling
- 32 oz full‑fat cream cheese, room temperature
- 1 cup + 2 tbsp granulated sugar
- ½ cup key lime juice
- ⅓ cup sour cream or plain yogurt, room temperature
- 1 tsp vanilla extract
- 2 tsp key lime zest
- 3 large eggs, room temperature
Make the Whipped Cream
1. In a stand mixer with a whisk attachment, whip heavy cream, sugar, and vanilla on medium‑high.
2. Whip 3–4 minutes until medium peaks form.
3. If over‑whipped, fold in a splash of cold cream to smooth it out.
4. Refrigerate until ready to pipe.
Prepare the Crust
1. Preheat oven to 350°F.
2. Combine graham cracker crumbs, sugar, and melted butter.
3. Press firmly into the bottom and slightly up the sides of a 9‑inch springform pan.
4. Bake 10 minutes, then cool slightly.
Make the Cheesecake Filling
1. Beat cream cheese and sugar on medium‑high until smooth and creamy.
2. Add lime juice, sour cream, vanilla, and lime zest; mix until combined.
3. Add eggs one at a time, mixing on medium until just incorporated.
4. Avoid over‑mixing to prevent cracks.
Assemble & Bake
1. Pour filling into the warm crust and smooth the top.
2. Place a metal baking pan on the lower oven rack.
3. Add 1 inch of boiling water to create a steam bath.
4. Place cheesecake on the center rack above the water.
5. Bake until set around the edges but slightly jiggly in the center.
6. Cool completely, then chill for several hours or overnight.
Finish & Serve
1. Loosen the cheesecake from the pan and remove the rim.
2. Pipe whipped cream around the edges.
3. Garnish with candied lime slices or extra lime zest.
