There's a smell that fills a Pittsburgh kitchen when halupki is simmering, and it takes you straight back to a grandmother's stove. 🍲 This dish came over with the Polish and Slovak families who settled the mill neighborhoods in the late 1800s and early 1900s, and it's been stretching a modest cut of meat into a full family dinner ever since. The sauerkraut folded into the sauce is a real Pittsburgh touch, a little tang that sets it apart from other regions' cabbage rolls.

Serves 6 · Total time: 2 hours 15 minutes

INGREDIENTS
- 1 large head green cabbage
- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup cooked white rice
- 1 small yellow onion, finely diced
- 1 large egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 2 cans (15 oz each) tomato sauce
- 1 cup sauerkraut, drained
- 2 tbsp brown sugar
- 1 tbsp apple c***r vinegar

INSTRUCTIONS
1. Bring a large pot of salted water to a boil. Core the cabbage and boil it whole for 3 to 4 minutes, peeling off softened outer leaves as they loosen. Set 12 leaves aside to cool.
2. In a bowl, mix the ground beef, ground pork, cooked rice, onion, egg, salt, pepper, and garlic powder until just combined.
3. Trim the thick center rib from each cabbage leaf. Place about 1/3 cup of filling on each leaf, fold in the sides, and roll tightly.
4. Spread the sauerkraut across the bottom of a large Dutch oven or slow cooker. Arrange the cabbage rolls seam side down on top.
5. Whisk the tomato sauce, brown sugar, and vinegar together, then pour evenly over the rolls.
6. Cover and simmer on low heat for 1.5 to 2 hours, or bake covered at 350°F for the same time, until the cabbage is tender and the rolls reach an internal temperature of 165°F.
7. Let rest 10 minutes before serving, spooning the sauce over the top.

Every family in this city seems to make halupki a little differently. How does yours do it?

Meatballs Recipes

Salisbury Steak Meatballs Recipe
Ingredients
1 lb ground beef
½ cup breadcrumbs
1 egg
¼ cup milk
1 small onion, finely chopped
1 tsp garlic, minced
1 packet (1 oz) brown gravy mix
1 cup beef broth
2 tbsp Worcestershire sauce
8 oz mushrooms, sliced
1 medium onion, sliced
Salt and black pepper to taste
Serves: 6 | Cook time: 30 minutes
How to Make: In a large bowl, combine the ground beef, breadcrumbs, egg, milk, finely chopped onion, minced garlic, salt, and black pepper, mixing gently just until combined, then shape into evenly sized meatballs. Heat a large skillet over medium-high heat and brown the meatballs on all sides, working in batches if necessary, then transfer them to a plate. In the same skillet, sauté the sliced onion and mushrooms for 4–5 minutes until softened and lightly browned. Whisk together the brown gravy mix, beef broth, and Worcestershire sauce, pour it into the skillet, and stir while scraping up the flavorful browned bits from the bottom. Return the meatballs to the skillet, reduce the heat to medium-low, cover, and simmer for about 12–15 minutes, stirring occasionally, until the meatballs reach 160°F (71°C) in the center and the mushroom-onion gravy has thickened. Taste and adjust the seasoning, then spoon the gravy generously over the meatballs and serve hot.

Grape Jelly Meatballs Recipe
Ingredients
1 lb frozen meatballs (or homemade)
1 cup grape jelly
1 cup chili sauce
1 tbsp soy sauce
1 tbsp Worcestershire sauce
½ tsp garlic powder
Serves: 8 | Cook time: 25 minutes
How to Make: Place the grape jelly and chili sauce in a large skillet or saucepan over medium heat and stir until the jelly melts and the mixture becomes smooth. Stir in the soy sauce, Worcestershire sauce, and garlic powder until completely combined, then add the frozen meatballs and toss until every meatball is coated in the sauce. Bring the mixture to a gentle simmer, reduce the heat to medium-low, cover, and cook for about 15–20 minutes, stirring occasionally so the sauce does not stick or scorch, until the meatballs are thoroughly heated through. Remove the lid for the final few minutes and simmer gently until the sweet and tangy sauce thickens into a glossy glaze that clings to the meatballs. Toss once more to coat thoroughly and serve hot as an appetizer or over rice for a meal.

Meatballs and Noodles Recipe
Ingredients
1 lb ground beef
½ cup breadcrumbs
1 egg
2 cloves garlic, minced
¼ cup milk
1 jar (24 oz) marinara sauce
12 oz egg noodles
1 tsp Italian seasoning
Salt and black pepper to taste
Serves: 6 | Cook time: 30 minutes
How to Make: In a large bowl, combine the ground beef, breadcrumbs, egg, minced garlic, milk, Italian seasoning, salt, and black pepper, mixing gently until just combined, then form the mixture into evenly sized meatballs. Heat a large skillet over medium-high heat and brown the meatballs on all sides, then pour in the marinara sauce, reduce the heat, cover, and simmer for about 12–15 minutes until the meatballs are fully cooked to 160°F (71°C) and the sauce is hot and flavorful. Meanwhile, bring a large pot of salted water to a boil and cook the egg noodles according to package directions until al dente, then drain well. Add the cooked noodles to the marinara sauce and gently toss until evenly coated, adding a splash of pasta water if the sauce needs loosening. Arrange the meatballs over the sauced noodles, spoon additional marinara over the top, and serve immediately.
French Onion Meatballs Recipe
Ingredients
1 lb ground beef
½ cup breadcrumbs
1 egg
2 onions, thinly sliced
2 cloves garlic, minced
2 cups beef broth
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 cup shredded Swiss cheese
1 tbsp butter
Salt and black pepper to taste
Serves: 6 | Cook time: 35 minutes
How to Make: Combine the ground beef, breadcrumbs, egg, half of the minced garlic, salt, and black pepper in a bowl and mix gently just until incorporated, then form into evenly sized meatballs. Brown the meatballs in a large oven-safe skillet over medium-high heat, then transfer them to a plate. Add the butter and thinly sliced onions to the same skillet and cook for about 8–10 minutes, stirring frequently, until softened and golden, then add the remaining garlic and cook for another 30 seconds. Pour in the beef broth, Worcestershire sauce, and dried thyme, scraping the bottom of the skillet to release the browned bits. Return the meatballs to the onion mixture, cover, and simmer for about 10–12 minutes until cooked through and the sauce has reduced slightly. Sprinkle the shredded Swiss cheese evenly over the meatballs, then cover for a few minutes or place briefly under the broiler until the cheese is completely melted and lightly browned. Spoon the rich onion gravy over the cheesy meatballs and serve hot.

Baked Spaghetti and Meatballs Recipe
Ingredients
12 oz spaghetti
1 lb ground beef
½ cup breadcrumbs
1 egg
¼ cup milk
2 cloves garlic, minced
1 jar (24 oz) marinara sauce
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tsp Italian seasoning
Salt and black pepper to taste
Serves: 8 | Cook time: 40 minutes
How to Make: Preheat the oven to 375°F (190°C) and lightly grease a large baking dish. Combine the ground beef, breadcrumbs, egg, milk, minced garlic, Italian seasoning, salt, and black pepper in a bowl, mix gently, and shape into evenly sized meatballs. Brown the meatballs in a skillet over medium-high heat, then add enough marinara sauce to coat them and simmer for about 8–10 minutes. Meanwhile, cook the spaghetti in salted boiling water until just shy of al dente, drain well, and toss with the remaining marinara sauce and about half of the Parmesan cheese. Spread the spaghetti evenly in the prepared baking dish, arrange the meatballs over the pasta, spoon the remaining sauce over everything, and cover with the mozzarella and remaining Parmesan. Bake for about 20–25 minutes, until the sauce is bubbling, the meatballs are cooked through, and the cheese is completely melted and golden in spots. Let the casserole rest for 5–10 minutes before serving so it sets slightly and is easier to portion.

Swedish Meatballs with Creamy Gravy Recipe
Ingredients
1 lb ground beef (or beef/pork mix)
½ cup breadcrumbs
1 egg
¼ cup milk
1 small onion, finely chopped
2 tbsp butter
2 cups beef broth
½ cup heavy cream
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
2 tbsp all-purpose flour
Salt and black pepper to taste
Serves: 6 | Cook time: 30 minutes
How to Make: In a large bowl, combine the ground beef or beef-and-pork mixture, breadcrumbs, egg, milk, finely chopped onion, salt, and black pepper, mixing gently until just combined, then roll into evenly sized meatballs. Melt 1 tablespoon of the butter in a large skillet over medium-high heat and brown the meatballs on all sides, working in batches if necessary, then transfer them to a plate. Reduce the heat to medium, melt the remaining tablespoon of butter in the skillet, whisk in the flour, and cook for about 1 minute to remove the raw flour taste. Gradually whisk in the beef broth until smooth, then stir in the heavy cream, Dijon mustard, and Worcestershire sauce. Return the meatballs to the skillet and simmer gently for about 8–10 minutes, stirring occasionally, until the meatballs reach 160°F (71°C) internally and the gravy becomes rich, smooth, and creamy. Taste and adjust the salt and pepper, then serve the meatballs with plenty of creamy gravy over mashed potatoes or egg noodles.

"This cinnamon treat reminds me of baklava; but with only a few easy ingredients, it's a fraction of the work. My Aunt Adele shared the recipe with me, and I think of her whenever I make it. It's one of my favorite air-fryer snacks!"
