Rolls. I made sub rolls yesterday. 2 hours from start to pull out of the oven. These rolls were loved by everyone. These can be made smaller for hot dog rolls or round for burger rolls. Super easy to make. These are not sourdough rolls, but still outstanding. I made 2 italian herb and cheese the rest plain. Next I will add a jalapeno cheddar to the list.

This roasted garlic focaccia bread as an over achiever from the moment I mixed the flour into the starter. The starter rose to peak and fell in over 6 hours. Was suppose to be 8-12 hours due to the volume of the starter needed. I started the starter and within 2 hours had a peak starter. Mixed it. Did a stretch and fold set and ran some errands. Came back and hourish later and rise was already happening. Did 3 rounds of coil folds and it rose everytime. Forgot about it and went about my day. Put it in the fridge and went to bed. Got up, roasted the garlic while it came to room temp. At the 2 hour mark I decided to put it in the pan (suppose to be 3/4). Didn't want to stretch so I let it rest for 10 minutes. Stretched it and gave it only an hout to relax (suppose to be 2/3). Added oil, cheese, italian seasoning, mozz and parm cheese and roasted garlic. Dimpled and put in the oven. Bottom crust is golden brown. Spells delish. Just waiting for it to cool!

My plan was same day roasted garlic and cheese sourdough focaccia bread. My starter over preformer making it not possible to do a same day. I then decided no worries I'll just turn it into an overnight one. I forgot it on my counter. Needless to say she has doubled, bubbly and giggly but I am not ready to bake her. I'll post the update tomorrow.
