We’re still here at What Todd Ate, and Todd IS getting fed 🤪🤪 for some reason life is just so busy right now!
Todd had a couple surprise meals this week that neither one of us was sure he’d like - but he did! 🙌🏻🙌🏻
Of course I missed any good pictures so today you get pictures of his leftover packed meals. 🫣
Monday’s dinner - random recipe idea I saw somewhere online. I guess I’ll call it “Italian Chicken, Potatoes and Green Beans.” Todd was super leery of this since the green beans were mixed in, but said it was “surprisingly delicious.”
Directions more than a recipe - I covered the bottom of an 11x7 baking dish with frozen chicken tenderloins, then sprinkled a packet of dry Italian salad dressing mix over the top. (Next time I might sprinkle over the assembled dish before the butter.). Then I cubed some unpeeled potatoes and tossed them over the chicken and added a can of green beans. Then I poured a stick of melted butter over it all. *I will use less butter next time. Cover with foil and bake at 350 for 40 ish minutes.

Tuesday’s dinner - I bought thin-cut cubed pork steaks (not something Todd would pick) and breaded them with a mix of crushed corn flakes, garlic powder and Parmesan. I pan fried them until crispy - about 3 minutes per side and served them with fresh mashed potatoes for extra good luck! Todd liked this meal too 🙌🏻
It was quick and easy to throw together - I started the potatoes to boil and then breaded the pork. I fried it and popped it in the warm oven to hold while I mashed the potatoes, then pull it all together on his plate.
* the cubed pork was quite a bit less than the cubed steak I’d typically buy him 🙌🏻🙌🏻

Well - it’s definitely NOT What Todd Ate, (he’s at work and there’s too much green on this plate!) but here’s a great breakfast for me (Amy) this morning. While there are snowflakes on my disges this breakfast screams summer with fresh tomatoes i grew! What makes this fantastic is that these are fresh tomatoes from my garden - last summer! 🎉

The tomato variety is an heirloom Italian storage tomato called “Grappoli D’Inverno” or Winter Grape. I fell down an heirloom tomato rabbit hole on the internet last winter while I was stuck on the couch healing my knee, and read about this variety. I wanted to try it and found a local source of plants - also how I ended up growing 31 varieties of tomatoes but that’s a story for another day 🤪🤪

The tomato slices you see here have been simply sitting on my counter since September! They sliced up amazingly and were the perfect addition to my nine-grain sourdough toast with avocado spread. 🙌🏻🙌🏻🙌🏻

Highly recommend the tomato variety and the breakfast 🙃🙃

This wasn’t a dinner, but breakfast.
Ham and Cheese Omelette, with sausage as a side, but I nailed it with the fold today! 🙌🏻🙌🏻

What Todd Ate has been busy camping with our vintage group (tincantourists.com) and I keep forgetting dinner photos - so you’re getting breakfast instead today! 🤪

Todd had Cowboy Hash, one of his favorite camping breakfasts.

I make it on our Blackstone, but you could easily make it at home in a skillet or in the oven on a sheet pan. Divide up a bag of fresh hashbrowns into howevermany servings you need on to a hot greased suface. (I cook the bacon first and then the blackstone is plenty greased.). After the first side has crisped, flip the hashbrowns. Make a well in each portion and then crack an egg into it. As the egg is cooking, top the whole portion with shredded cheese and cut up crispy bacon. Once the egg is semi-solid, flip the whole thing again to cook the egg completely- unless you like runny eggs~. I do a final flip, scoop up any pieces of bacon that felll off and then add a tiny but more cheese. 🙌🏻

Just a quick, down and dirty Fettuccine Alfredo for dinner tonight on What Todd Ate. We were running around and it got late! I know Todd will always like this and I can have it in his plate in 15 minutes~
Todd declined adding a Mediterranean Chicken to it tonight, so just pasta. I posted the exact recipe several months back, but after your pasta has cooked and is draining, throw 1/4 cup (ish) butter in the hot pan and let it melt. To that add 1/2 cup (ish) heavy whipping cream and let it warm- return to low heat if needed. Then add 1-1 1/2 cups grated Parmesan and mix well. I usually add a handful of shredded Parmesan too 🙃. Return pasta to the pan with sauce, toss and serve!
