We’re still here at What Todd Ate, and Todd IS getting fed 🤪🤪 for some reason life is just so busy right now!
Todd had a couple surprise meals this week that neither one of us was sure he’d like - but he did! 🙌🏻🙌🏻
Of course I missed any good pictures so today you get pictures of his leftover packed meals. 🫣
Monday’s dinner - random recipe idea I saw somewhere online. I guess I’ll call it “Italian Chicken, Potatoes and Green Beans.” Todd was super leery of this since the green beans were mixed in, but said it was “surprisingly delicious.”
Directions more than a recipe - I covered the bottom of an 11x7 baking dish with frozen chicken tenderloins, then sprinkled a packet of dry Italian salad dressing mix over the top. (Next time I might sprinkle over the assembled dish before the butter.). Then I cubed some unpeeled potatoes and tossed them over the chicken and added a can of green beans. Then I poured a stick of melted butter over it all. *I will use less butter next time. Cover with foil and bake at 350 for 40 ish minutes.
Tuesday’s dinner - I bought thin-cut cubed pork steaks (not something Todd would pick) and breaded them with a mix of crushed corn flakes, garlic powder and Parmesan. I pan fried them until crispy - about 3 minutes per side and served them with fresh mashed potatoes for extra good luck! Todd liked this meal too 🙌🏻
It was quick and easy to throw together - I started the potatoes to boil and then breaded the pork. I fried it and popped it in the warm oven to hold while I mashed the potatoes, then pull it all together on his plate.
* the cubed pork was quite a bit less than the cubed steak I’d typically buy him 🙌🏻🙌🏻
