Hello there. It's been a while. I am late to the sourdough game. I created a starter in late February I think. I wanted fresh sourdough bread for Easter dinner. Well lots of stuff happened and my starter did get to the point I could use it but due to some life situations I put it all in the back of the fridge April 4th. I decided to try again on June 28th. I started a new starter and a second one from my discard in the fridge. After 4 days of feeding, the discard was active again. This morning I made my first sourdough discard waffles. They are so tender and pillowy! My plan is to make bread Saturday so I can bake it Sunday morning! Fingers crossed.

Veggie lasagna, post 5. I did not get a pic when it came out of the oven. However, not much left. It was really good. I cooked it uncovered in a 350 degree oven for an hour. Then removed the cover and cooked for another hour until the middle was 165 degrees.

Veggie lasagna, post 3. Okay, my knees are starting to hurt from all the standing. I did stop for some lunch but 4 hours in, I am done prepping today. Tomorrow is make the sauce, assemble, and bake. Now I have to wash all the dishes! BOOOoooo 😕

Digging around the fridge to find something for breakfast. Found some leftover cheesy polenta and some stewed chard from dinner a few nights ago. Fried a couple eggs and what a breakfast it was! I will be full and satisfied most of the day! You can put eggs an just about anything in my opinion!
