Our most coveted recipe………TOMATO PIE…..explained in DETAIL!! Let us know if you have any questions!! We’ve encountered every possible problem - so feel free to ask questions.
DINNER’S READY (DAUPHIN ISLAND) TOMATO PIE
5-6 medium HOMEGROWN Tomatoes (hot house tomatoes just don’t do it!)
1 DEEP DISH Pie Crust
Thick slice tomatoes (1/4”) and - THIS IS IMPORTANT - place the tomatoes slices between paper towels to absorb some of the liquid - otherwise - you will end up with a soggy crust! DO NOT - UNDER ANY CIRCUMSTANCE PUT YOUR TOMATOES IN THE FRIDGE!!! It totally ROBS the flavor!
Meanwhile:
Pre-bake pie crust (perforate the crust with a fork) - Bake 12-13 minutes @ 350 degrees
TOPPING (for 1 pie) - combine all and mix well:
1 Cup Mozzarella
1 Cup Sharp Cheddar
1 Cup Mayonnaise
1/3 Cup Parmesan
1/2 Tsp Garlic Powder
YOU WILL ALSO NEED:
Salt, Pepper
Fresh Basil - NOT OPTIONAL - (chiffonade cut)
Sliced Green Onion
Bacon (optional - but really good!)
ASSEMBLE: Place sliced tomatoes to entirely cover the bottom of the pie shell…..sprinkle with salt & pepper, add basil, green onions, and bacon (if preferred)….top with another layer of sliced tomatoes - sprinkle tomatoes with salt & pepper.
Add Cheese Topping. Pack down into the pie crust - IT WILL FIT!
I sprinkle smoked paprika on top for color and flavor.
Bake at 350 degrees for approximately 30 minutes or until golden brown and DELICIOUS!
