Last Saturday Alyse and I had our 3rd cooking extravaganza. We each get to pick 2 recipes, we spin a wheel to see what recipe we cook and get to it. We have been doing it once a month. This time it was one of my recipes. We cooked a german chicken fricassee along with garlic buttered noodles and smashed parmesan broccoli florets.
After we cook and eat we all (Alyse, myself and Debi) get to give it a score. The score for this dish was an 8 of 10.
Fricassee is a simple hearty chicken thigh dish with mushrooms and peas cooked in a chicken gravy. Just a good warm winter type meal. The noodles were a simple egg noodle with garlic butter and a little parmesan. Again, simple and hearty but very tasty. The broccoli was par cooked, smashed flat and sprinkled with parmesan cheese then baked in the oven until the cheese was melted and the edges were crisp. A very nice twist to the standard boring broccoli.
I hope you give some of these dishes a try. If you would like the recipe to anything we cook please ask. I would be happy to get it to you.
Thanks for reading!

I just wanted to share a couple of pieces of kitchen equipment that I find very useful.
First is a coring tool. This thing was about a buck and is way easier and safer than a knife. I use it mostly for tomatoes but I've done potato eyes and strawberries too.
The second is a metal cake poker (or whatever). You use it on cakes and other stuff like you would a toothpick to see if the center is done. You can also use it on potatoes or anything else you need to know is soft. (carrots, broccoli, brussel sprouts etc). The back of it is like a plastic knife for cutting around the edges of cakes and muffins to release them from their tins. Mine came from Pampered Chef.

What to do with a whole bag of potatoes that have growing eyes?I made and froze four big portions of home fries.

Some of you may remember back in September when Alyse and I made a quiche together. That was the first in a series of monthly cooking get togethers we were going to have.
This post is about the second.
It's kind of lengthy. As I post these I hope to get better at telling the story of cooking without being boring. I may experiment with video as well but thats for another time.
In this get together we spun the wheel and Deconstructed Wonton soup won.
So here we go.
Look through the photos and learn how we made this delicious asian soup.

What if you had a bag of chips and needed something to dip them in BUT you didn't have anything. What can you do!?😲
Well if you have some sour cream and a hand full of spices you can make your own french onion dip!
This was super easy and very tasty. I'll drop a link in the comments to the recipe I used.

With literally 6 ingredients this should be a must try. I don't know what else they put in the packaged ones but this has to be healthier.

Enjoy!

So I had this idea that if I made a bunch of sausage egg muffins for Deb she could just grab one in the morning, open it, warm it up and get back to making me money.

Here's what I did, what worked and what didn't work.

Scan through the photos to read.
I hope you enjoyed seeing this....🙂

OH PS With the amount of time labour this took I could have walked to McDonalds, bought 50 of these already pre made and would have been just as tasty....

UPDATE:
Ok so we took out the first one after being in the freezer for a little more than a week.
Attempted to get it to thaw and heat without drying out the egg or sausage and to keep the muffing from getting all gummy and tough. Started in the microwave on 1/2 power and monitored it. When things looked thawed we moved it to the air fryer to crisp it up.
Result was a dry egg and sausage with a tough muffing.
Next time we will try wrapping it in damp paper towel and play with the time and power settings.
Thoughts so far: Just go to McDonalds and get the real thing fresh. 😅

I love the cooler weather because it means soup.
Today we made rotisserie chicken noodle and vegetable soup.
See photos for the special noodles I used. They are like the ones you get in the packs of dry insta soup.
I’ll attach the recipe in the comments.

Tomorrow we make hot artichoke dip for the Bills game. Be sure to look in. I think it’s going to be pretty easy and tasty.🙂
