Made this one last night with rave reviews from all. So easy!!
Placed 3 pound roast in slow cooker. Sprinkled package of Lipton Onion Mushroom Soup mix, package of Ranch Dressing mix, garlic/lemon seasoning. Added whole chopped onion. Large can cream of mushroom soup. Cook on high 3-4 hours. Served with mashed potatoes and Allen's seasoned green beans (the BEST) with bacon. It was wonderful!!

Slow Cooker Chicken and Dumplings

Ingredients:
1 onion, chopped
1 ¼ lb. boneless skinless chicken breasts or thighs, cut into bite sized pieces
1 tsp. dried oregano
Pinch of salt
Pinch of black pepper
2 (10.5 oz) cans cream of chicken soup
2 cups chicken broth
4 sprigs fresh thyme
1 bay leaf
2 stalks celery, chopped (1/2 cup)
2 large carrots, peeled and chopped (1/2 – ¾ cup)
1 cup frozen peas, thawed
1 tbsp. minced garlic
1 can refrigerated biscuits

Directions:
1. Scatter onion in the bottom of the slow cooker. Top with chicken. Top with oregano salt and pepper
2. Pour soup and broth over chicken; then add thyme and bay leaf. Cover and cook on high until chicken is cooked through, about 3 hours.
3. Discard thyme and bay leaf. Stir in celery, peas, carrots and garlic. Cut biscuits into small pieces and stir into chicken mixture. Make sure all biscuits are covered by liquid.
4. Cook on high until vegetables are tender and biscuits are cooked through, about 1 ½ hours. Stir every 30 minutes.

Slow Cooker Garlic Parmesan Chicken

Ingredients:
3 Tbsp. Olive Oil, divided
2 lb. bone in, skin on, chicken thighs
Salt
Ground pepper
1 lb. baby red potatoes, quartered
2 Tbsp. butter, softened
5 cloves garlic, minced (1 ½ Tbsp minced)
2 Tbsp. fresh thyme
Freshly chopped parsley
½ cup freshly grated parmesan plus more for serving

Directions:
1. In a large skillet, heat 1 Tbsp oil. Season chicken with salt and pepper. Sear in hot oil until golden (about 3 minutes per side)
2. In the slow cooker, toss potatoes with remaining oil, butter, garlic, thyme, parsley and parmesan and season with salt and pepper. Add chicken and cook on high for 4 hours or low for 8 hours.
3. Garmish with extra parmesan to serve.

Pairs well with a green salad and garlic toast.

Slow Cooker Pork Chops / Loin

Ingredients:
2 lb. boneless pork loins or pork chops
1 package Ranch Dressing Mix
1 Tbsp garlic powder or minced garlic
2 (10.5 oz) cans cream of mushroom or cream of chicken soup
1 envelope Onion Soup Mix

Directions:
1. In a bowl, mix soup, dressing mix, soup mix and garlic. Spread half into slow cooker. Top with pork. Cover with Remaining soup mixture.
2. Cook 3 hours on high or 6 hours on low.
Serve over rice, egg noodles, or mashed potaoes.
Pairs well with yeast rolls or biscuits, green salad or green beans.

Slow Cooker Death by Chocolate Cake

Ingredients:
1 box Devils food cake mix
1 small box instant chocolate pudding
1 cup whole milk
3 eggs
½ cup melted butter
¼ cup sour cream
1 tsp vanilla extract
½ tsp salt
2 cups semisweet chocolate chips
Ice Cream for serving

Directions:
1. In a bowl, combine cake and pudding mixes. Add milk, eggs, butter, sour cream, vanilla, and salt. Mix until smooth. Manually fold in chocolate chips
2. Grease the bowl of crock pot or line with creased parchment paper. Add batter and smooth top flat.
3. Cook on high 2 – 2-1/2 hours on high. Check at 2 hours to make sure edges are not burning. Cake can be kept on warm up to 4 hours before serving,
4. The finished cake will be gooey in the center and baked on the sides.
Serve with vanilla ice cream.

Slow Cooker Beef Tacos

Ingredients:
1 small beef chuck roast (3-4 lbs)
1 large onion, diced
1 Tbsp minced garlic
Juice of 3 limes (or ½ cup lime juice)
1 Tbsp chili powder
1 Tbsp dried cumin
1 Tbsp dried oregano
4 cups chicken broth
20 small corn tortillas
Sour cream, green onion, lettuce, tomatoes for serving

Directions:
1. In the slow cooker, combine roast, onion, garlic, lime juice, seasonings, and chicken broth. Cover and cook on low for 8 hours.
2. Remove roast to a large bowl and shred with 2 forks.
3. Warm tortillas. Top with beef and onions. Serve with condiments as desired.
Pairs well with charro beans.

Slow Cooker Beef and Broccoli

Ingredients:
1 ½ lb. sirloin steak, thinly sliced in 1 inch strips
1 cup beef broth
½ cup soy sauce
½ cup brown sugar
3 tbsp. sesame oil
1 tbsp. sriracha (optional)
1 Tbsp garlic, minced
3 green onions thinly sliced, plus more for serving
2 Tbsp corn starch
2 cups broccoli florets
Cooked jasmine rice for serving

Directions:
1. In slow cooker, add steak, beef broth, soy sauce, brown sugar, sesame oil, sriracha, garlic and green onions
2. Cover and cook on low 3-1/2 to 4 hours. Ensure that steak is done
3. When the steak is tender, spoon ¼ cup sauce into a bowl and whisk with cornstarch. Pour back into slow cooker and toss until combined. Add broccoli and cook covered for 20 – 30 minutes more.
4. Serve over rice.
To cook rice, its ½ cup rice to 1 cup water for each serving. Cook 18 – 20 minutes on stovetop.

Its time to get started on those Slow Cooker meals to avoid the oven cooking during these hot days. For this week, I will have the following:
Slow Cooker Chicken and Dumplings, Garlic Parmesan chicken, Pork Chops/Loins, Beef Tacos and for Dessert , Death by chocolate cake (yes, cooked in the slow cooker. You can copy the text from the posting and save them into a word document if you like to start your own files. So here we go
