Creamy Summer Vegetable Chowder (No More Watery Soup!)
There's nothing quite as disappointing as scooping up a bowl of chowder only to find it thin and watery instead of rich and comforting. I struggled with getting that perfect creamy consistency for years! But I finally figured out the simple trick that guarantees a thick, velvety chowder every single time, loaded with delicious summer veggies and crispy bacon.
Ingredients:
4 slices bacon
1 large onion, chopped
2 cloves garlic, minced
2 tablespoons all-purpose flour
4 cups vegetable broth or chicken broth
1.5 pounds potatoes, peeled and cut into 1-inch cubes
2 cups fresh or frozen corn kernels
2 medium zucchini, halved lengthwise and sliced 1/2 inch thick
2 cups whole milk or half-and-half
1/4 cup chopped fresh parsley or chives
Salt and black pepper to taste
