We all love a girl dinner of pasta, butter, and parm, but this dish takes girl dinner up a notch and still comes together in 20 minutes🫶🏻🫒

Ingredients: (makes 2 servings cause the only thing I love more than girl dinner is girl dinner leftovers the next day)
- 2 servings of angel hair pasta
- 1/3 cup of green olives, sliced
- 5 garlic cloves, minced
- 1/3 cup white wine (I used pinot grigio)
- 1 lemon
- 1/4 cup pecorino romano
- Black pepper, to taste
- Good olive oil

Directions:
1. Bring a pot of salted water to a boil and cook the angel hair pasta until al dente.
2. In a sauté pan on medium heat, add a large drizzle of olive oil and sauté minced garlic and sliced green olives for 2 minutes. Add in white wine and cook for 3 more minutes.
3. Add in the cooked pasta and zest the whole lemon. Then, add in a big squeeze of lemon juice, to taste. Season with black pepper, to taste.
4. Top with pecorino romano cheese and a drizzle of good olive oil.

A quick high-protein breakfast prep for the week!🍳

I love prepping these egg squares for breakfast because I’m not a morning person and I like having quick & easy breakfast options. Plus, you can customize them Hoover you want! And, I’ve been wanting to start making my own breakfast sausage at home because every breakfast sausage at the store is full of sodium and just way too salty tasting for my taste. They’re actually way easier to make than you’d think!

In the morning, I just toast up an English muffin and butter it up, microwave the sausage patty and an egg square with a slice of cheese on top, and breakfast is served!

For the egg squares:

Ingredients:
- 9 eggs
- 1/4 cup heavy cream
- 1/2 tsp kosher salt
- 1/2 tsp pepper
- 1/2 tsp Trader Joe’s 21 Seasoning Salute (or your favorite no salt seasoning)
- 1/2 cup pepper jack cheese, shredded (or any cheese you like)

Directions:
1. In a large bowl, whisk together eggs, heavy cream, seasonings, and shredded cheese. Pour into a greased 9x9 pan.
2. Place the 9x9 pan into a larger pan. Fill the larger pan with boiling water until it reaches the top of the eggs in the 9x9 pan.
3. Bake on 350Âş for 15 minutes. Remove from oven, allow to cool, and cut into 9 squares. Eat it fresh or store in the fridge in a container.

For the breakfast patties:
- 1 lb ground pork (you could also use ground chicken)
- 3 tbsp maple syrup
- 1/2 tsp dried thyme
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp Trader Joe’s 21 Seasoning Salute (or your favorite no salt seasoning)
- 1/2 tsp kosher salt (only if your ground pork doesn’t contain any salt)
- 1/4 tsp pepper

Directions:
1. In a large bowl, combine ground pork, maple syrup, and all your seasonings. Mix well and form into 9 thin patties.
2. In a pan on medium heat, add olive oil and cook your breakfast patties for about 3 minutes on each side, or until fully cooked.
3. Enjoy fresh or store them in the fridge in a container.

4. With gloved hands, mix together.
5. Place parchment paper on the counter, then add 1/4 of the meat mixture on top. Place another piece of parchment paper on top. Use a rolling pin to roll out the meat mixture until it’s thin.
6. Remove the top layer of parchment paper and fold into a log.
7. Place them on a baking sheet and bake on 400ÂşF for 25 minutes.
8. When they’re fully cooked, remove from oven, unwrap the meat, and rip into slices.
9. You can add them to a pita with all the fixings, but I made a bowl with cous cous, cucumber salad, pickled red onions, hummus, and feta.
