🧈 Homemade Butter: Better Than Store-Bought! 🧈
I’ve had several folks message me about my homemade butter post, so I wanted to share with exactly how to do it! It is surprisingly easy, much cheaper than the "fancy" brands, and WOW... the taste is incredible.
What You Need:
Heavy Cream: Get the really good stuff (see notes below).
Mixer: A stand mixer makes this easy, but a hand mixer works too, just more work (or, Lord, get a churn... LOL).
Ice Water: Very important for the final step.
Strainer & Cheesecloth: Or paper towels.
Yield: 2 cups of cream = approx. 2 sticks of butter.
The Process (Takes about 15 mins):
Whip It: Pour cream (I used 2 cups) into the mixer with the whisk attachment. Start on medium. It will turn into whipped cream first—keep going!
The Splash Zone: Once it starts looking grainy, turn the speed up to medium-high. Pro-Tip: Throw a large kitchen towel over the mixer to cover the sides. When the butter separates from the buttermilk, it splashes A LOT.
Separation: After a few minutes, you’ll hear the sound change and see distinct clumps of yellow butter separate from the liquid buttermilk. Turn off the mixer.
Drain: Pour the contents through a fine-mesh strainer. Save that buttermilk in a bowl for biscuits or pancakes!
The Rinse (Crucial Step): Put the butter back in the mixer bowl with about a cup of ice water. Switch to the paddle attachment and mix. This rinses the remaining buttermilk off.
Repeat: Pour out the cloudy water and repeat until the water runs clear. Note: If you don't rinse the butter well, it can go rancid quickly.
Shape & Set: Squeeze the butter with cheesecloth/paper towels to get the last bit of water out. Shape it, place it in the fridge to set, and enjoy!
Storage: Keep homemade butter in the fridge to keep it fresh. Don't leave it out on counter to store.

Note: I love using fresh local, heavy fat cream when I can find it. The flavor and the texture is great, but good quality heavy cream from the store will work well.
