1 pound ground beef
1 medium onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 tablespoon house seasoning (equal parts garlic powder, onion powder, and black pepper)
1 (10 ounce) can diced tomatoes with green chilies, undrained
1 (10 ounce) can beef broth (use empty tomato can to measure)
3 cups chopped cabbage
1 cup shredded extra sharp cheddar cheese, or more as desired

Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease. Add the onion, bell pepper, garlic, Worcestershire sauce, and house seasoning. Cook for several minutes, stirring to combine.

Stir in the tomatoes and beef broth, then add the cabbage. Cover the skillet and reduce the heat to medium. Cook until the cabbage is tender but not mushy, about 20 to 25 minutes. Uncover, stir in the cheddar cheese, and cook just until melted and blended.

2 cups cooked chicken breast, cubed
2 ripe avocados, diced
1 cup cherry tomatoes, halved
2 tablespoons fresh parsley, chopped

1/3 cup Greek yogurt or mayonnaise
1 tablespoon olive oil
1 garlic clove, minced
Salt, to taste
Black pepper, to taste

In a large bowl, combine the chicken, avocados, and cherry tomatoes. 🧑‍🍳 Cheesy Spinach Puff Pastries

2 sheets puff pastry, thawed
2 cups fresh spinach, chopped
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 egg, beaten
1 tsp garlic powder
Salt and black pepper to taste
1 tbsp olive oil

Preheat the oven to 400°F. Line a baking sheet with parchment paper.

Heat olive oil in a skillet over medium heat. Add the spinach and cook for 2 to 3 minutes, just until wilted. Remove from the heat and let cool slightly.

In a bowl, combine the spinach, ricotta cheese, Parmesan cheese, garlic powder, salt, and pepper. Mix until well blended.

🧑‍🍳 Beef Stir Fry Noodles

1 pound beef sirloin or flank steak, thinly sliced
2 tablespoons soy sauce
1 tablespoon cornstarch
1/2 teaspoon black pepper
8 ounces rice noodles or flat noodles
2 cups broccoli florets
1 red bell pepper, sliced
1 small onion, sliced
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
3 tablespoons soy sauce
2 tablespoons hoisin sauce
1 teaspoon sesame oil
2 tablespoons vegetable oil
Sesame seeds, for garnish

In a bowl, combine the sliced beef with 2 tablespoons soy sauce, cornstarch, and black pepper. Toss well and let marinate for 15 minutes.

Cook the noodles according to the package directions. Drain and set aside.

Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat. Add the beef and stir fry for 2 to 3 minutes until browned. Remove from the pan and set aside.

2 cups spinach, chopped
1/2 cup sun dried tomatoes, chopped
3/4 cup egg whites
4 eggs
1 teaspoon Italian seasoning
Salt and pepper to taste
1/4 cup crumbled feta cheese
Cooking spray

Preheat the oven to 350 degrees. Lightly coat a muffin pan with cooking spray or line with muffin liners.
In a large bowl, whisk together the egg whites and eggs until smooth and fully combined. Stir in the chopped spinach, sun dried tomatoes, Italian seasoning, salt, and pepper. Mix until everything is evenly distributed.
Pour the egg mixture into the prepared muffin cups, filling each about two-thirds full. Sprinkle the feta cheese evenly over the tops.

This Forgotten Chicken is the kind of old school comfort meal that never lets you down. Tender chicken, creamy rice, and that slow baked flavor that feels like home. You just mix it, cover it, and let the oven do all the work.

🧑‍🍳 Forgotten Chicken

4 boneless skinless chicken breasts
1 cup long grain white rice, uncooked
1 can (10.5 ounces) cream of mushroom soup
1 can (10.5 ounces) cream of chicken soup
1 1/2 cups water or chicken broth
1 envelope dry onion soup mix
Salt and black pepper, to taste
Nonstick cooking spray

Preheat oven to 350°F. Lightly coat a 9x13-inch baking dish with nonstick cooking spray. Spread the uncooked rice evenly across the bottom of the dish.

In a medium bowl, whisk together the cream of mushroom soup, cream of chicken soup, and water or chicken broth until smooth. Pour the mixture evenly over the rice.

Place the chicken breasts on top of the rice mixture and season lightly with salt and pepper. Sprinkle the dry onion soup mix evenly over everything.

Cover the dish tightly with aluminum foil and bake for 1 hour and 30 minutes. Do not remove the foil while baking.

Remove from the oven and let rest for 5 to 10 minutes before serving. The rice should be tender and the chicken juicy and flavorful.
