Meet your new favorite puff puff (Bofrot)
Ingredients
* 3 cups bread flour or all-purpose flour
* 2 teaspoons instant yeast
* 1 teaspoon ground nutmeg
* ½ cup sugar or agave syrup
* 1½ teaspoons matcha powder
* 2½ cups room-temperature water
* Cooking oil, for deep frying
Preparation
1. Combine the dry ingredients:
In a large mixing bowl, combine the flour, instant yeast, nutmeg, sugar, and matcha powder. Mix well.
2. Add the water:
Gradually pour in the 2½ cups of room-temperature water, mixing continuously until you have a smooth, thick, and sticky batter. If using agave syrup instead of sugar, mix the agave syrup into the water before adding it to the dry ingredients.
3. Allow the batter to rise:
Cover the bowl with plastic wrap or a clean kitchen towel. Place it in a warm area and allow the batter to rise for 45–60 minutes, or until doubled in size and bubbly.
4. Heat the oil:
Add enough cooking oil to a deep pot for frying. Heat the oil over medium heat to approximately 350°F (175°C).
5. Shape and fry:
Scoop small portions of the batter using your hand or a spoon and carefully drop them into the hot oil. Fry in batches to avoid overcrowding the pot.
6. Fry until golden:
Turn the puff puff occasionally and fry for approximately 3–5 minutes, or until beautifully golden and cooked through.
7. Drain:
Remove with a slotted spoon and transfer to a paper towel-lined plate to drain any excess oil.
