Lazy garlic butter steak and potatoes
1 and 1/2 pounds of steak, cut into bite-sized cubes
1 and 1/2 pounds of baby yellow potatoes, quartered
1 tablespoon of olive oil
4 tablespoons of butter
4 cloves of minced garlic
Salt and freshly cracked black pepper
Fresh chopped parsley
Get a large skillet heating on the stove over medium heat and pour in the olive oil. Toss in your quartered potatoes, season them with a good pinch of salt and pepper, and let them cook until they are fork-tender and beautifully browned on the outside, then scoop them out onto a plate. Keep the skillet nice and hot, drop in your seasoned steak cubes, and let them sear for a couple of minutes on each side until they get a great crust. Turn the burner down to low, toss the butter and minced garlic right into the pan with the meat, and let it bubble together for about a minute until the garlic smells fantastic. Dump the warm potatoes back into the skillet, toss everything around so the steak and potatoes are completely coated in that rich garlic butter sauce, and finish it off with a sprinkle of fresh parsley.
This is such an incredibly easy lazy dinner to throw together on a busy weeknight, and the whole family agreed it is an absolute keeper. The kids absolutely devoured every single bite tonight, but I always make sure to cook a large enough batch that there are still plenty of leftovers for my lunch tomorrow.
