Ultimate Smothered Chicken with Mushrooms, Peppers & Creamy Mashed Potatoes 🍗🍄🥔

Ingredients
🥔 2 lb Yukon Gold potatoes, peeled and cut into chunks
🧂 1 ½ tsp salt, divided
🥛 ½ cup warm milk
🧈 4 tbsp butter, divided
🍗 4 boneless chicken breasts or 6 boneless chicken thighs
🌶️ 1 tsp black pepper, divided
🌶️ 1 tsp smoked paprika
🧄 1 tsp garlic powder
🫒 2 tbsp olive oil
🧅 1 large onion, thinly sliced
🍄 10 oz cremini or button mushrooms, sliced
🫑 1 red bell pepper, sliced
🟡 1 yellow bell pepper, sliced
🟢 ½ green bell pepper, sliced
🧄 3 garlic cloves, minced
🥫 ½ cup chicken stock
🍋 1 tbsp lemon juice
🌶️ ¼ tsp chili flakes, optional
🌿 3 tbsp chopped fresh parsley
Instructions
Boil the potatoes. Place potatoes in salted water and boil for 15–20 minutes, or until very tender when pierced. Drain well and let them steam dry for 2 minutes; BBC Good Food uses warm milk and butter for a smooth, creamy mash.
Mash the potatoes. Add warm milk, 2 tbsp butter, and ½ tsp salt to the potatoes. Mash until creamy but still slightly fluffy, then cover to keep warm.
Season the chicken. Pat the chicken dry and season with ½ tsp salt, ½ tsp black pepper, smoked paprika, and garlic powder. Let it sit for 10 minutes so the seasoning clings well.
Sear the chicken. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden, then transfer to a plate; it will finish cooking with the vegetables.
Cook the vegetables. Add onion, mushrooms, red pepper, yellow pepper, green pepper, and remaining 2 tbsp butter to the skillet. Cook for 7–9 minutes, stirring often, until the mushrooms brown and the peppers soften; Serious Eats notes that mushrooms brown best once their moisture cooks off.
