Creamy Roasted Veggie Potato Salad 🥔🥗

What you'll need:
Potatoes
Red + yellow bell pepper
Red onion
Carrot
Pickles
Corn
Vegan yogurt
Vegan mayo
Fresh dill
Lemon
Garlic

Directions
You roast the veggies until they get soft and sweet, roast the potatoes until they're golden and crispy, mix up the creamy dill dressing, then toss everything together while it's still warm.
It's rich, tangy, crunchy, creamy and honestly addictive. Eat it warm or let it sit for even more flavor

1️⃣ Pan-fried cauliflower & salsa verde
2️⃣ Parmesan roast swede & lentils
3️⃣ Halloumi & cabbage fritters
4️⃣ Charred baby cabbage & capers
5️⃣ Celeriac & chickpea salad
6️⃣ Blood orange ricotta toast
7️⃣ Braised red cabbage & polenta
8️⃣ Blood orange & chocolate tart

The best burger you'll ever have is VEGAN and very very easy to make, so give it a try!

RECIPE (3 big patties, 45min prep time):
Caramelized onions:
-1 big onion
Cut into thin slices and cook on medium heat in a pan with some oil until brown and caramelised (I often add a pinch of sugar to help that process).

Patties:
-1 can (220g) black beans (or kidney beans), drained and washed
-1 Tsp cumin
-1/2 Tsp smoked paprika
-1 Tsp dried oregano
-2 Tbsp soy sauce
-5 Tbsp breadcrumbs or chickpea flour (-3 to 4 Tbsp
water if the mix feels too dry)
Mash with a fork until it's a chunky mix and refrigerate while making the sauce.
Then shape into 3 big patties and fry in oil until golden brown.

Sauce:
-6 Tbsp vegan mayo
-2 Tbsp ketchup
-1 Tap mustard
-1 Tsp chopped pickles
-salt to taste
Mix well.
Assemble everything on burger buns and enjoy.

Lazy dumplings (30min prep time, 1-2 servings):
Filling:
-200g smoked tofu, crumbled
-1 carrot, shredded
-2 spring onion, chopped
-1 Tbsp soy sauce
-1 Tbsp hoisin sauce
-2 Tsp vinegar
-salt to taste
Mix well.
Else:
-6 lasagna sheets, broken in half Parboil in salted water for 6mins.
Then layer in small ramekins: lasagna sheet, filling, lasagna sheet, filling, lasagna sheet.
Steam for 7-10mins.
Dipping sauce:
-1 Tsp chili flakes
-1 Tbsp soy sauce
-2 Tsp agave syrup
-2 Tsp white wine vinegar
-2 Tsp sesame oil
Mix well and serve over the steamed dumpling ramekins.

RECIPE (6 skewers, 30min prep time):
-2 eggplants
Peel and cut in thin slices.

Marinade:
-4 Tbsp tomato paste
-2 Tsp soy sauce
-2 Tbsp vinegar or lemon juice
-2 Tbsp maple syrup or agave
-3 Tbsp olive oil
-1 Tsp each paprika, cumin, ground coriander
-1/2 Tsp each turmeric, cinnamon
-salt and pepper to taste
Mix the marinade and then add the eggplant.
Massage until fully covered and put them on skewers by folding the slices multiple times.
Grill on each side on medium heat for 5-ins until nicely colored and tender.
(Brush with some leftover marinade if you have any).

I have a confession: My kitchen shelf used to be a graveyard for cookbooks I never opened. 🪦📚

1️⃣ CRUNCHY CHICKPEA AND CAULIFLOWER TACO BOWL

Ingredients:
Makes 4 servings
I small cauliflower head, cut into florets
1 cup cooked or canned chickpeas
2 tablespoons avocado oil
I tablespoon taco seasoning (cumin, turmeric, coriander, smoked paprika, garlic powder,
chilli powder)

For the Avocado Sauce:
1/2 large Hass avocado
I tablespoon plain yoghurt (I used dairy-free soy yoghurt)
Juice of half a lime
Fresh coriander

Toppings:
I large or 2 small tortillas
Iceberg lettuce
Quinoa
Cherry tomatoes
Chilli flakes and sesame seeds

Method:
1. Preheat the oven to 180°C and line a baking tray with parchment paper
2. Arrange cauliflower florets and chickpeas on the prepared baking tray, drizzle with oil and sprinkle with seasonings. Roast in the oven for 30 minutes or until cauliflower is soft and chickpeas are crispy brown.
3. Cut tortilla into small bite-sized pieces, spray with oil and season to taste. Place them on the baking tray lined with parchment paper and bake for 10 minutes or until the chips are crispy.
4. To make the sauce, simply add all the ingredients into a blender or food processor and pulse until creamy and smooth.
5. Assemble the bowl with roasted cauliflower and chickpeas, lettuce, quinoa, cherry tomatoes, tortilla chips and the sauce.
6. Serve immediately or store in an airtight container for dinner or lunch meal prep for the week ahead.
