SAVE these Lemon Parm Potatoes! 🍋
These roasted potatoes are tiny flavor bombs with a hint of tangy, fresh lemon. They’re perfect and a must try if you haven’t thought to add Parm + Lemon together!

I start by pealing + cutting yellow potatoes into bite sized pieces and boil them in chicken broth until they are fork tender. I drain the potatoes then cover and shake them. For this one bag of small yellow potatoes I added 1/2 tsp salt, 1/4 tsp black pepper and 1 tsp garlic powder but truly season with your heart. I cover and shake once more. On a baking sheet I add 1/4 cup of olive oil and place it in the oven at 400 degrees for about 5 minutes. (You might want to add more oil if you are baking more potatoes or have a larger baking sheet. I just like to make sure the oil coats the whole pan.) Once the oil is hot I add the potatoes onto the baking sheet and bake them for 15 minutes. I give them a quick flip and bake again for another 15 minutes or until the potatoes are golden and crisp. Let them cool slightly before tossing with fresh parm, a touch of lemon zest and one squeeze of lemon.

SAVE this easy snack idea! Everyone in our family loves having these protein bites on hand for a quick, hearty snack. You can customize the flavor protein and use any nut or seed butter you like. I just really recommend blending your oats for a delicious texture.

To make these Protein Bites blend together; 1 cup rolled oats, 1 scoop protein powder, pinch of salt. Then add in 1/2 cup nut or seed butter, 1/4 cup honey, 1 tbs coconut oil and 1 tsp vanilla. Blend until a cookie dough forms. Use a tablespoon measure and roll into balls. Top with something crunchy like mini chocolate chips, sunflower seeds, or chopped nuts. Store them in the refrigerator!
