๐Pesto Chicken Melt on Crispy Parm-Grilled Sourdough
For the frico grilled bread
๐ง2 slices sourdough bread
๐ง12g Parmigiano Reggiano Cheese
๐ฏ Butter Melted, for brushing on bread
To top the bread before grilling in pan
๐ง3 slices provolone cheese or mozzarella
๐ฟfresh basil pesto
๐1 chicken breast roasted or grilled.
For the roasted red peppers
๐ถ1 red bell pepper
๐ฅdrizzle extra virgin olive oil
โกpinch flaky sea salt
โซblack pepper
๐freshly cracked, to taste
For the arugula salad
๐ฅhandful arugula
๐ฅdrizzle extra virgin olive oil
๐squeeze fresh lemon
๐ง6g Parmigiano Reggiano Shaved
โกpinch flaky sea salt
โซblack pepper freshly cracked, to taste

๐Sourdough bread is made with a ๐sourdough starter, a mix of flour and water left to ferment. This fermentation process creates natural ๐งชacids and bacteria that offer a number of ๐คhealth benefits, including: ๐คฒimproved digestive health, ๐improved heart health, ๐antioxidant benefits, better ๐งฌnutrient absorption, and a ๐คคtastier flavor.

๐Making a delicious Italian sandwich is easy and fast with this recipe!๐ Preheat your oven or air fryer to 200C/395F and roast the peppers in a small tray for 8-12 minutes until softened and charred. ๐ฅMeanwhile, heat a large frying pan to a medium heat then butter one side of each piece of bread ๐and sprinkle grated Parmigiano Reggiano ๐งon top.
Flip the bread to expose the non-buttered sides then spread pesto ๐ฟon both slices and add provolone ๐งor mozzarella ๐งto one side. Place the butter/cheese sides of both slices in the frying pan ๐ณand cook until melted and golden brown. ๐ณIn a small bowl, mix together arugula, olive oil, lemon, shaved Parmigiano Reggiano and salt and pepper.
๐Remove the sandwich from the pan and add the peppers to the cheese side ๐ถand the arugula salad to the chicken side. Squish the sandwich together, cut and enjoy! ๐
