Homemade Strawberry Vanilla Bean Ice Cream 🍓🍦
Treat yourself to creamy bliss with this homemade strawberry vanilla bean ice cream! It's a fruity delight you can whip up any time!
Ingredients:
- 1 cup fresh strawberries, hulled and diced
- 2 cups heavy cream
- 1 vanilla bean, split and seeds scraped
- 1 cup whole milk
- ¾ cup granulated sugar, divided
- Pinch of salt
- 6 large egg yolks
- 2 tbsp sugar (for strawberries)
- 1 tsp pure vanilla extract
Instructions:
1. Prepare the strawberries: In a small bowl, combine the diced strawberries with 2 tablespoons of sugar. Allow them to sit for about 30 minutes; this process will help release their natural juices, enhancing their sweetness.
2. Heat the cream and milk mixture: In a saucepan over medium heat, combine the heavy cream, whole milk, half of the granulated sugar, a pinch of salt, and the seeds along with the pod of the vanilla bean. Heat the mixture until it just begins to boil, then take it off the stove.
3. Temper the egg yolks: In a separate bowl, whisk the egg yolks together with the remaining granulated sugar until smooth. Gradually add the hot milk mixture to the egg yolks, a bit at a time, whisking continuously to prevent the yolks from cooking.
4. Cook the custard: Return the mixture back to the saucepan and cook on low heat while stirring constantly with a wooden spoon. Heat the custard until it thickens enough to coat the back of the spoon, typically between 170-175°F.
5. Chill the custard: Pour the custard through a fine-mesh sieve into a bowl to remove any lumps. Stir in the pure vanilla extract. Cover the bowl and chill the custard in the refrigerator for at least 4 hours or preferably overnight.
6. Process in the ice cream maker: After chilling, remove the vanilla bean pod and churn the custard according to your ice cream maker’s instructions. In the last few minutes of churning, gently fold in the macerated strawberries for an extra fruity burst.
7. Freeze and serve: Transfer the churned ice cream to an airtight container and freeze for 2-4 hours until firm. Scoop out your delightful creation, serve, and enjoy!
