Exciting news everyone! I’m done moving and just about done unpacking everything. I’ll be at CalCity farmers market this coming Saturday the 18th, BUT also I will finally have a very limited amount of honey in comb available for sale! My girls were very slow to get around to filling these frames.

I get a lot of people asking about crystalized honey. The thing about honey is it never goes bad. They’ve found it in tombs in Egypt. It either ferments when contaminated (how you can make mead) or it crystallizes. It does this because of the water content of the nectar they collect from flowers. Less water, more likely to crystallize faster.

Sometimes honey can get real thicc. (When it does give the jar a warm water bath. It should help it! Sometimes leaving it in a hot place like a car can help too.

Spent some time over at the in Palmdale talking about bees and sharing some honey samples! Everyone seemed to enjoy the presentation and seeing the bees up close and personal. One of my stragglers outside of the observation hive decided to hang out demonstrating how gentle bees can bee. In the tiny jars are former Africanized bees that had to be put down.
