Spinach and Feta Pie
Ingredients:
✔1 package of phyllo dough (thawed)
✔500g fresh spinach (washed and chopped)
✔200g feta cheese (crumbled)
✔1 onion (finely chopped)
✔2 cloves garlic (minced)
✔3 eggs (beaten)
✔1/2 cup olive oil
✔Salt and pepper to taste
✔1/4 teaspoon nutmeg (optional)
Instructions:
1.Preheat the oven to 180°C (350°F).
2.Prepare the filling: In a large pan, heat a bit of olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft. Add the spinach and cook until wilted. Remove from heat and let it cool slightly.
3.Mix the filling: In a large bowl, combine the cooked spinach mixture, crumbled feta cheese, beaten eggs, salt, pepper, and nutmeg. Mix well.
4.Assemble the pie: Brush a baking dish with olive oil. Layer the phyllo dough sheets in the dish, brushing each sheet with olive oil before adding the next. Use about half of the phyllo sheets for the bottom layer.
5.Add the filling: Spread the spinach and feta mixture evenly over the phyllo dough.
6.Top the pie: Cover the filling with the remaining phyllo sheets, brushing each with olive oil. Tuck the edges of the phyllo dough into the dish to seal the pie.
7.Bake: Place the pie in the preheated oven and bake for about 45 minutes, or until the top is golden brown and crispy.
8.Serve: Let the pie cool slightly before cutting into squares. Enjoy warm or at room temperature.
