Slow Cooker Corned Beef
Melt-in-your-mouth beef, tender vegetables, and rich slow-cooked flavor make this Slow Cooker Corned Beef the ultimate hearty comfort meal. Perfect for a cozy dinner everyone will love!
Ingredients:
1.3–1.5 kg (3–3½ lb) corned beef brisket with spice packet
4 cups beef broth
4 medium potatoes, peeled and cut into chunks
3 carrots, cut into large pieces
1 small onion, quartered
3 cloves garlic, smashed
1 small cabbage, cut into wedges
1 tsp black pepper
1 tsp mustard seeds (optional)
2 bay leaves
Directions:
1- Prepare the Slow Cooker:
Place potatoes, carrots, onion, and garlic in the bottom of the slow cooker.
2- Add the Beef:
Place the corned beef brisket on top of the vegetables. Sprinkle the included spice packet over the meat.
3- Add Liquid & Seasoning:
Pour in the beef broth. Add bay leaves, black pepper, and mustard seeds if using.
4- Slow Cook:
Cover and cook on Low for 8–9 hours or High for 4–5 hours, until the beef is tender.
5- Add Cabbage:
Place cabbage wedges into the slow cooker during the last 45–60 minutes of cooking so they stay tender but not overcooked.
6- Slice & Serve:
Remove the brisket and let it rest for a few minutes. Slice against the grain and serve with the vegetables and a little broth spooned over the top.
