Creamy Cajun Chicken Pasta
A spicy, creamy, and flavorful pasta dish with a Cajun twist! š¶ļøš
Ingredients:
- 2 boneless, skinless chicken breasts, sliced
- 12 ounces pasta (penne or fettuccine)
- 2 tablespoons olive oil
- 2 teaspoons Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup pasta water (reserved)
- 2 tablespoons fresh parsley, chopped
Directions:
1. Cook pasta according to package instructions. Reserve 1/2 cup pasta water and drain.
2. Toss chicken with Cajun seasoning, salt, and pepper.
3. Heat olive oil in a skillet over medium heat and cook chicken for 6 minutes until golden brown. Remove from pan.
4. Add garlic and sun-dried tomatoes to the skillet, cooking for 2 minutes.
5. Pour in heavy cream, Parmesan, and red pepper flakes. Simmer for 3 minutes.
6. Toss in cooked pasta and chicken, adding reserved pasta water if needed.
7. Garnish with fresh parsley and serve.
