Mashed Potato Cheese Puffs

Ingredients:

2 cups mashed potatoes (leftover or freshly made)

1 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1 egg

2 tbsp chopped chives (optional)

Salt and pepper to taste

1/4 cup breadcrumbs (optional, for added crunch)

Preparation:

Preheat oven to 400°F (200°C) and lightly grease a muffin tin or line with paper cups.

In a large bowl, mix mashed potatoes, cheddar, Parmesan, egg, chives, salt, and pepper until well combined.

Spoon the mixture into the muffin tin, filling each cup about 3/4 full. Sprinkle with breadcrumbs if using.

Bake for 20–25 minutes or until golden and puffed.

Let cool slightly before serving. Great as a snack or side dish!

German Chocolate Poke Cake

Ingredients:

1 box of German chocolate cake mix

1 1/2 cups of water

1/2 cup of vegetable oil

3 large eggs

1 can of sweetened condensed milk

1 cup of caramel sauce

1 cup of chopped pecans

1 cup of sweetened shredded coconut

1/2 cup of butter, softened

4 cups of powdered sugar

1/4 cup of milk

Instructions:

1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.

2. In a large mixing bowl, combine the cake mix, water, vegetable oil, and eggs. Beat the mixture until it is well combined.

3. Pour the cake batter into the prepared pan and bake it for 30-35 minutes, or until a toothpick comes out clean when inserted into the center of the cake.

4. Once the cake is done baking, take it out of the oven and let it cool for 5 minutes.

5. In a medium mixing bowl, combine the sweetened condensed milk and 1/2 cup of caramel sauce. Whisk the mixture together until it is well combined.

6. Using the end of a wooden spoon, poke holes into the cake at 1-inch intervals.

7. Pour the caramel sauce mixture over the cake, making sure to spread it evenly.

8. In a large mixing bowl, beat the butter until it is creamy. Gradually add in the powdered sugar, milk, and remaining caramel sauce, mixing until it is smooth and creamy.

9. Fold in the chopped pecans and shredded coconut.

10. Spread the frosting over the cake, making sure to cover it completely.

My mom made my Peanut Butter Chocolate Chip Cookie Bars today, but used Reese’s too! She sent me this pic after having one and said they are her new favorite cookie! They are my fav too, if you have a sweet tooth, these are a must try!
Ingredients
1/2 cup creamy peanut butter
1/2 cup unsalted butter softened
3/4 cup white sugar
3/4 cup brown sugar light
2 eggs room temperature
1 teaspoon vanilla extract
2 1/4 cups flour all purpose
1 teaspoon baking powder
1/2 teaspoon salt
1 cup peanut butter chips
1-2 cups semi-sweet chocolate chips depends on how sweet you want the cookie bars, we use 2 cups.

Instructions
Preheat oven to 375 degrees and grease a 9x13 baking pan or line with parchment paper.
In a large mixing bowl, cream together the softened butter and peanut butter until smooth and creamy.
Add in the white sugar and brown sugar, stir until just combined.
Add eggs and vanilla extract, mixing until just combined.
Slowly mix in the dry ingredients (flour, baking powder, and salt).
Gently fold in the peanut butter chips and chocolate chips.
Press dough evenly into prepared pan and bake in preheated oven for about 25-30 minutes, or until edges are slightly golden brown. You can also use a toothpick to check the center if done.
Remove baking dish from oven and allow cookie bars to cool before slicing and serving! Enjoy!

A delightful dessert that combines the salty crunch of pretzels with a creamy filling and a fresh strawberry topping, perfect for summer gatherings or any sweet occasion.

Ingredients:
**For the Pretzel Crust**
- 2 cups crushed pretzels
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar, or your choice of sweetener

**For the Cream Cheese Layer**
- 1½ cups cold heavy whipping cream
- 1 teaspoon pure vanilla extract
- 1 cup + 2 tablespoons granulated sugar, or your choice of sweetener
- 8 ounces cream cheese, softened
- 1 cup chopped walnuts

**For the Strawberry Topping**
- 2 packages (3 ounces each) sugar-free strawberry gelatin
- 2 cups boiling water
- 1 pound fresh strawberries, sliced
- Whipped topping and pretzels, for garnish (optional)

Directions:

1 lb (450g) boneless chicken breast, cut into strips
1 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
½ tsp paprika
½ tsp salt
½ tsp black pepper
½ tsp chili flakes (optional)
½ tsp lemon juice
For the Cucumber & Tomato Salad:

½ cucumber, sliced
½ cup cherry tomatoes, halved
½ tsp dried dill (or fresh)
Pinch of salt & black pepper
For the Yogurt Sauce:

½ cup Greek yogurt
½ clove garlic, minced
½ tsp dried mint (or fresh)
½ tsp lemon juice
Pinch of salt
🍽️ Step by Step:

1️⃣ Prepare the Chicken:

In a bowl, mix chicken strips with olive oil, garlic powder, oregano, paprika, salt, black pepper, and chili flakes.
