Pistachio Crusted Brie Bites with Raspberry Honey Glaze
These elegant bite-sized appetizers combine creamy baked Brie, crunchy pistachios, and a sweet raspberry honey glaze. Perfect for holiday parties, brunches, gatherings, or a sophisticated snack that looks impressive but is incredibly easy to make.

For the Brie Bites
8 oz (225g) Brie cheese
Β½ cup shelled pistachios, finely chopped
1 sheet puff pastry, thawed
1 egg, beaten (for egg wash)
For the Raspberry Honey Glaze
Β½ cup fresh raspberries
2 tbsp honey
1 tsp lemon juice
Garnish
Extra chopped pistachios
Fresh raspberries
Fresh mint leaves (optional)

Step 1: Prepare the Brie
Preheat oven to 400Β°F (200Β°C).
Cut Brie into small bite-sized cubes.
Roll out the puff pastry and cut into small squares.
Step 2: Assemble
Place a Brie cube in the center of each pastry square.
Fold the pastry around the cheese and seal the edges.
Brush each bite with beaten egg.
Sprinkle generously with chopped pistachios.
Step 3: Bake
Arrange on a parchment-lined baking sheet.
Bake for 12β15 minutes or until golden brown.
Remove and allow to cool slightly.
Step 4: Make the Raspberry Honey Glaze
In a small saucepan, combine raspberries, honey, and lemon juice.
Cook over low heat for 3β4 minutes.
Mash gently and strain if a smoother glaze is desired.
Step 5: Finish & Serve
Drizzle warm raspberry honey glaze over the Brie bites.
Garnish with extra pistachios and fresh raspberries.
Serve warm for the best creamy texture.
