This baked fish has absolutely no business being this good and yet here we are 😭🐟

Fresh fish scored, rubbed with thyme, sage, habanero seasoning, suya pepper, and chicken seasoning, wrapped in foil, and baked until everything has soaked all the way through. Served with a fresh cabbage, cucumber, and carrot salad on the side. Clean, light, and full of flavor.

Here's what you need:

🛒 INGREDIENTS

The Stir Fry Base

Olive oil
Onions
Diced tomatoes and peppers
Ground black pepper
Greek fish herbs
All purpose seasoning

The Fish Rub

Fresh fish (cleaned and scored)
Thyme leaves
Rubbed sage
Habanero seasoning
Chicken seasoning
Nigerian suya pepper
2 teaspoons olive oil

The Salad

Fresh cabbage
Cucumber
Grated carrots
Salad dressing of your choice

👩🏽‍🍳 HOW TO MAKE IT

The Base

1. Heat olive oil in a skillet and add onions
2. Add diced tomatoes and peppers and stir fry
3. Add ground black pepper, Greek fish herbs, and all purpose seasoning
4. Stir to blend and set aside

The Fish
5. Clean your fish and score it on both sides
6. Mix thyme, sage, habanero seasoning, chicken seasoning, and suya pepper in a bowl
7. Add 2 teaspoons of olive oil and stir
8. Add your stir fried tomato base and mix together
9. Rub generously all over the fish and into every scored area
10. Wrap in foil and bake at 375°F for 45 minutes to 1 hour

The Salad
11. Slice your cabbage into a bowl
12. Add diced cucumber and grated carrots
13. Add your salad dressing and toss to combine
14. Serve alongside your fish and enjoy!

Score the fish. Do not skip that step. It is what gets all that suya pepper and sage flavor deep into the flesh instead of just sitting on the surface 🌶️🐟

Name a more iconic snack. We will wait 😂🍡

Puff puff is soft, golden, warm, and absolutely impossible to stop eating once you start. And the best part is it only takes a handful of ingredients and a little patience while the batter rests to get it right.

Here's what you need:

🛒 INGREDIENTS

All purpose flour
Water
Oil for frying (groundnut, olive, or vegetable oil)

👩🏽‍🍳 HOW TO MAKE IT

Add your flour into a bowl
Gradually add water and mix as you go
Beat the batter until it is smooth, not too watery and not too thick
Cover the bowl and let the batter rest for 45 minutes to one hour
Heat your oil in a deep pot or pan
Scoop about half a handful of batter and drop it gently into the hot oil
Fry and turn the balls in the oil until they are golden brown all the way around
Remove, drain on a paper towel, and serve warm!

The one hour rest is the secret. Do not skip it. That is what gives you that soft fluffy inside that makes puff puff what it is. The batter consistency is equally important. It should hold its shape when you scoop it but not be stiff. Get those two things right and your puff puff will come out perfect every time 🤌

This mushroom veggie stir fry has been our go-to side dish lately and honestly sometimes it is just the whole meal 😄

White mushrooms, cabbage, spring onions, shredded carrots, fresh garlic, shallots, pink salt, and black pepper all in one skillet. It comes together so fast and the flavor is way better than it has any right to be for something this simple.

Here's what you need:

🛒 INGREDIENTS

Fresh cabbage (outer leaves removed, washed, and sliced)
Spring onions (washed and chopped)
White mushrooms (cleaned and halved)
Diced shallots
Fresh garlic
Shredded carrots
Olive oil
Pink salt
Bouillon
Ground black pepper

👩🏽‍🍳 HOW TO MAKE IT

Peel and wash your cabbage, slice it up, and set aside
Wash and chop your spring onions and set aside
Clean your mushrooms under running water and slice into halves
Heat olive oil in a skillet and add your diced shallots
Add a pinch of pink salt and stir fry until the shallots go translucent
Add the spring onions and stir
Add the mushrooms and stir fry
Add your bouillon and stir fry for a minute or two
Add fresh garlic and stir
Add ground black pepper and keep stirring
Add your shredded carrots and stir fry
Add the cabbage in portions and stir gently
Let everything simmer together until the cabbage softens just a little
Serve and enjoy!

Do not rush the cabbage. Add it in portions, stir gently, and let it soak up all that flavor from the skillet. That is the move 🥬🍄
