Honey Lime Chicken and Avocado Rice Stack

Ingredients:

For the rice:
2 cups rice
3 cups chicken broth
1/4 cup soy sauce
1 tablespoon sesame oil
1/4 teaspoon garlic powder

For the chicken:
1 pound boneless, skinless chicken breasts, thinly sliced
1/4 cup honey
1/4 cup lime juice
1/2 teaspoon grated ginger

For the avocado:
1 avocado, sliced

Instructions:

Cook rice: Bring the chicken broth to a boil in a large pot. Add the rice, soy sauce, sesame oil, and garlic powder. Reduce heat, cover, and simmer for 20-25 minutes, or until the rice is tender.

Marinate chicken: In a bowl, combine the honey, lime juice, and ginger. Add the chicken and marinate for at least 15 minutes.

Grill chicken: Grill the marinated chicken until cooked through and slightly charred.

Assemble: Layer the rice, grilled chicken, and avocado slices in a serving dish.

Serve: Serve immediately and enjoy!

Homemade Blackening Seasoning 🌶️

Ingredients:

• 2 tbsp smoked paprika (or regular paprika)
• 1 tbsp cayenne powder (adjust for spice level)
• 1 tbsp onion powder
• 1 tsp garlic powder
• 1 tsp ground black pepper
• 1 tsp sea salt
• ½ tsp dried basil
• ½ tsp dried oregano
• ½ tsp dried thyme

Instructions:

• Combine all ingredients in a small bowl, mixing until evenly blended.
• Store in an airtight container. Use as needed for blackening fish, shrimp, poultry, beef, and more.

Notes:
Makes about 3 ounces (just under ½ cup). To increase spiciness, add extra cayenne or swap for a hotter chili powder.

Pineapple Chicken and Rice

Ingredients:

1 pound boneless, skinless chicken breasts, thinly sliced
1 tablespoon olive oil
1/2 onion, chopped
1 can (15 oz) pineapple chunks, drained
1/4 cup soy sauce
1/4 cup honey
1/4 cup rice vinegar
1 clove garlic, minced
1/4 teaspoon red pepper flakes (optional)
2 cups cooked rice

Instructions:

Cook chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned. Remove from skillet and set aside.

Sauté onion: Add onion to the skillet and cook until softened.

Add pineapple: Stir in pineapple chunks, soy sauce, honey, rice vinegar, garlic, and red pepper flakes (if using).

Combine: Return chicken to the skillet and toss to coat.

Serve: Serve over cooked rice.

Taco Soup

Ingredients:

1 lb hamburger meat
2 packets taco seasoning
1 packet dry ranch seasoning
1 can diced tomatoes
1 can corn
1 can black beans
1 can kidney beans
1 can Rotel
1 can tomato sauce

Optional Toppings:
Sour cream
Shredded cheese
Jalapeños

Instructions:

Cook Hamburger Meat:
In a skillet, cook the hamburger meat over medium heat until browned. Drain any excess fat.

Combine Ingredients:
Add the cooked hamburger meat to a large pot.
Add the diced tomatoes, corn, black beans, kidney beans, Rotel, and tomato sauce to the pot.
Sprinkle in the 2 packets of taco seasoning and the dry ranch seasoning.

Simmer:
Stir all ingredients together until well combined.
Bring the mixture to a simmer over medium heat.
Reduce the heat to low and let it simmer for 1 hour, stirring occasionally.

Serve:
Ladle the soup into bowls.
Top with sour cream, shredded cheese, and jalapeños as desired.

Pineapple Christmas Balls

Ingredients:

1 can (20 oz) crushed pineapple, well-drained
1 cup graham cracker crumbs
1 cup shredded sweetened coconut
1 cup powdered sugar
½ cup unsalted butter, softened
1 teaspoon vanilla extract
Additional shredded coconut (for rolling)

Instructions:

Mix the pineapple base: In a large bowl, combine the well-drained crushed pineapple, graham cracker crumbs, shredded coconut, powdered sugar, softened butter, and vanilla extract. Stir until everything is well mixed and forms a sticky dough-like consistency.

Shape the balls: Scoop out about 1 tablespoon of the mixture and roll it into a small ball using your hands. Repeat until all the mixture is used up.

Roll in coconut: Roll each ball in additional shredded coconut, ensuring each one is fully coated.

Chill: Place the pineapple balls on a parchment-lined baking sheet and refrigerate for at least 1 hour, or until firm.

Serve: Once firm, transfer the Pineapple Christmas Balls to a serving dish and enjoy!

Garlic Sausage Alfredo Rigatoni

Ingredients:

12 oz rigatoni pasta
4 garlic sausage links, sliced
1 tbsp olive oil
4 cloves garlic, minced
1 ½ cups heavy cream
1 cup grated Parmesan cheese
½ cup chicken broth
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Directions :

Cook the pasta:
Boil the rigatoni in salted water according to package instructions until al dente. Drain and set aside.

Cook the sausage:
Heat olive oil in a large skillet over medium heat. Add the sliced garlic sausage and cook until browned on all sides, about 5-7 minutes. Remove from skillet and set aside.

Make the Alfredo sauce:
In the same skillet, add minced garlic and cook for about 1 minute, until fragrant. Pour in the heavy cream and chicken broth. Stir and bring to a gentle simmer.

Add the cheese:
Stir in Parmesan cheese, allowing it to melt and thicken the sauce. Season with salt and pepper to taste.

Combine:
Add the cooked rigatoni and browned sausage into the skillet, tossing to coat everything in the creamy Alfredo sauce.

Mac & Cheese

INGREDIENTS:

– 3 Cups of uncooked elbow macaroni pasta.
– 2 Cups of shredded cheddar cheese.
– 1 Cup of shredded Colby cheese.
– 3 Tablespoons of soft butter.
– 3 Cups of half and half.
– A large can of Campbell’s Cheddar Cheese condensed soup, use the 15 ounces can.
– 1/2 Teaspoon of ground black pepper.
– 1/2 Teaspoon of smoked paprika.

DIRECTIONS:

Step 1: To create a hot bowl of cheddar cheese soup, I combined the half and half with the cheddar cheese soup, and mixed until it’s smooth.
Step 2: Further, I mixed in the paprika and black pepper to fulfill the flavor.
Step 3: I poured half of the elbow macaroni and cheese into the crockpot with half of the shredded cheddar and half of the Colby, half of the butter, and a half and half soup mixture.
Step 4: I mixed until thoroughly combined. And I used the remaining cheese for topping.
Step 5: I set the slow cooker on low, then I covered the slow cooker with the lid. I let it simmer for around three hours.

Cream Cheese and Bacon Stuffed Doritos Chicken

Ingredients:

4 boneless, skinless chicken breasts
1 cup cream cheese, softened
1/2 cup cooked bacon, crumbled
1/4 cup green onions, chopped
1/2 teaspoon garlic powder
Salt and black pepper to taste
2 cups crushed Doritos
2 large eggs, beaten

Directions:

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a small bowl, mix together the cream cheese, bacon, green onions, and garlic powder. Season with salt and pepper.
Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
Stuff each chicken breast with the cream cheese mixture.
Dip each stuffed breast first in beaten eggs, then coat thoroughly with crushed Doritos.
Place on the prepared baking sheet and bake for 25-30 minutes, or until the chicken is thoroughly cooked and the crust is golden.
Serve hot, with extra dipping sauce if desired.

Ingredients:

2 cups milk (whole or your preferred type)
1/4 cup cocoa powder
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
1/2 cup peppermint schnapps (adjust to taste)
Whipped cream for topping (optional)
Crushed peppermint candies or candy canes for garnish (optional)

Instructions:

Heat the Milk: In a medium saucepan, heat the milk over medium heat until warm, but do not let it boil.
Mix Cocoa and Sugar: In a separate bowl, combine the cocoa powder and granulated sugar.
Combine: Gradually whisk the cocoa-sugar mixture into the warm milk until fully dissolved and smooth.
Add Vanilla and Schnapps: Stir in the vanilla extract and peppermint schnapps, mixing well.
Serve : Pour the hot chocolate into mugs.

Beef Barley Soup

Ingredients:

- 1 1/2 lbs beef stew meat, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, peeled and sliced
- 3 celery stalks, sliced
- 1 cup pearl barley
- 8 cups beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- Salt and black pepper, to taste
- 1 cup mushrooms, sliced (optional)
- Fresh parsley, chopped (for garnish)

Instructions:

1. Sear the Beef:
- In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Add the beef stew meat and sear on all sides until browned. Remove the beef from the pot and set aside.
2. Cook the Vegetables:
- In the same pot, add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
- Add the minced garlic and cook for another 1-2 minutes, until fragrant.
3. Add the Barley and Liquids:
- Stir in the pearl barley, beef broth, diced tomatoes (with juice), and tomato paste.
- Return the seared beef to the pot.
4. Season and Simmer:
- Add the dried thyme, dried rosemary, bay leaves, salt, and black pepper.
- Bring the soup to a boil, then reduce the heat to low and let it simmer, covered, for about 1 hour, or until the barley and beef are tender.
- Stir occasionally to prevent sticking.
5. Add Mushrooms (Optional):
- If using, add the sliced mushrooms to the pot during the last 20 minutes of cooking.
6. Adjust Seasoning:
- Taste the soup and adjust the seasoning with more salt and black pepper if needed.
7. Serve:
- Remove the bay leaves before serving.
- Ladle the soup into bowls and garnish with chopped fresh parsley.
