Ingredients:
- 2 cups macaroni pasta
- 1 pound ground turkey or chicken
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups beef or vegetable broth
- 1 cup shredded cheddar cheese
- 1 can diced tomatoes (14.5 ounces)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
Instructions:
1. In a large pot over medium heat, add the ground turkey or chicken, breaking it apart with a spoon. Cook for about 5-7 minutes or until browned. Drain any excess fat if needed.
2. Add the diced onion and minced garlic to the pot, sautรฉing for an additional 3-4 minutes until the onion is translucent and fragrant.
3. Stir in the beef or vegetable broth, diced tomatoes (with their juice), Worcestershire sauce, dried oregano, paprika, salt, and pepper. Bring the mixture to a gentle boil.
4. Once boiling, add the macaroni pasta. Reduce heat to a simmer and cook for about 8-10 minutes or until the pasta is tender, stirring occasionally to prevent sticking.
5. Remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy. If desired, adjust seasoning with more salt and pepper.
