🥚 Creamy Carnivore Pulled Pork Egg Salad
A rich, savory, protein-packed recipe that combines tender pulled pork, creamy chopped eggs, and crispy bacon. It’s especially good for using leftover plain pulled pork and can be made in about 15 minutes.
Ingredients
6 large eggs
2 cups cooked pulled pork, shredded
4 slices bacon, cooked and crumbled
½ cup mayonnaise
2 tablespoons butter, softened
½ teaspoon salt
¼ cup shredded cheddar cheese, optional
Instructions
Cook the eggs: Place eggs in a saucepan, cover with water, and bring to a boil. Cook for 9–10 minutes.
Transfer eggs to an ice bath, cool, peel, and chop.
If your pulled pork is cold, warm it slightly, then let it cool before mixing.
In a bowl, combine mayonnaise and softened butter until smooth.
Add chopped eggs, pulled pork, and bacon.
Season with salt and gently fold everything together.
Stir in cheddar cheese if using.
