Happy August 15, 2026! Today's harvest total: 41.325 lbs combined of peaches, tomatoes, delicata squashes, and pumpkins! One tiny diakon radish too!

This isn't including the 8 peaches I already picked, cut up, and froze for later use, that filled a half gallon bag.

We have much more out there that is still ripening and getting bigger. Also, I am pretty sure we got around 300 lbs of plums this year, too, but i didnt take pictures of the baskets and baskets I filled.

Sundays end up being food prep days for each week. Today, I used up the left over ricotta cheese from I made lasagna on Friday on more ricotta egg cups. I made 10 bratwurst sausages and stored them in the refrigerator, I boiled 20 eggs, and I cut and packaged up slices of banana bread for rhe week.

How do you boil eggs? I use my Instant Pot, put it on high pressure for 6 minutes, and then let it naturally release for 5 minutes before I open the valve. After that, I put the eggs in cold water until they cool down enough and then store them in the refrigerator in a bowl. My husband, son, and I all eat boiled eggs throughout the week - they are great sources of protein and have so many other nutrients.

For dinner we are having grilled tritip and chicken with green beans and rice. ❤️ Happy Sunday!!

Today I made two loaves of the best banana bread i've ever made! The top loaf was baked for 70 minutes and the bottom loaf was baked for 80 minutes. Here is my recipe:

Banana Oatmeal Chocolate Chip Bread

6-7 over ripe bananas, mashed
1 cup netural cooking oil (i used Corn)
4 large eggs
2-4 tsp vanilla extract

Mix in a bowl until thoroughly combined. Don't overmix.

In that bowl add:

3 cups flour
1 cup rolled oats
1.5 tbsp baking powder
1 tsp salt
1.5 tbsp cinnamon
1/4 tsp ground cloves
3/4 tsp nutmeg

Mix thoroughly until well combined.

Add:

1/2 cup milk and mix well. Don't overmix.

Fold in:

1-1.5 cups of finely diced (near mince) pecans
1 cup chocolate chips

Pour batter into two prepared loaf pans (make sure to oil or butter them). Bake loaves at 350 °F anywhere between 70 and 80 minutes. The loaves are done when a toothpick comes out clean after putting into the very middle of the loaves (the most batter-iest part).

Let cool on wire racks for at least 20 minutes before cutting into the loaves. Enjoy slices with butter 🧈 ❤️

This can be frozen however, I would suggest to freeze the slices individually.

I'm making a loaf of orange bread (using my blender) for the first time ever. I'm not sure if I'll like it but it is so pretty in all the videos and pictures, I had to try it. I don't have oranges though, so I used 5 clementines. I emailed myself the recipe and shared it below. I also made a big ol jar of pickled veggies that were going south in the fridge. I'm excited to try them tomorrow!

I also had all of my groceries delivered today. I've done delivery for things here and there before but never entire orders like I did today. Everything worked out great & I think I will be doing this more often!

Dinner tonight will be spaghetti with marinara, Italian sausage, green beans, and a salad. What's for dinner in your home today?? Happy Friday everyone!
